This soup is bay! [leaf] GET IT, SEE THAT BAY LEAF?! Okay sorry, I’m exhausted. This Chia Pudding with Berries is a go to for myself before work, or as a late night snack. Stir in all of the remaining ingredients until completely combined. 2 Shape into walnut sized balls and flatten them onto a non stick baking tray with your hand. 3 Bake in an oven preheated to 180C / 350D for 12 to 15 minutes until they are golden . They will be quite soft but wlll firm up a little when they are cool. For today’s lunch I tried something different: baked plantains. A lot of grains leave me feeling bloated so I’m trying to find some different carbs that don’t make me feel that way. I really enjoyed these today and they were so easy to make! Slice, spray with olive oil (about a tsp) and season with salt. I ran out of gluten free bread, so for lunch today I made coconut flour cloud bread to go with my egg and it was 👌🏼👌🏼 Recipe: 1 tbsp coconut flour (I used @betterbodyfoods brand) 3 tbsp egg whites or 1 egg 2 tbsp liquid (I used chicken bone broth) Garlic & herb seasoning Heat pan to medium, spray with Pam, then cook on one side until bubbling (kinda like a pancake) then flip, cook the other side, and enjoy! 😋 So delicious and quick!!

On Sundays I usually take the time to cook at least 4 lunches to take to the office during the week. Been doing this for years for various reasons: health, money and the comfort of not having to leave the office if it’s cold ou rainy. Usually I meal prep on Sundays but I haven’t had time to do that so I’ve been eating leftovers, sticking to my meal plan still! And making it work. I’m so thankful that this meal plan is so easy to follow that I don’t really have to think about what to eat, plus when I head to whole foods I can just use my meal plan and match it with what is available here and make it work! . .
