🍑 Vegan Shakshuka 📷 by 🚨🚨Recipe: 1/2 a red onion, diced 3-4 cloves of garlic, minced 1 red bell pepper, deseeded and sliced 1 tsp cumin 2 tsp smoked paprika 1 stock cube 1 tsp rice syrup or any other syrup 1/4 tsp cinnamon 1/4 tsp chilli powder 1 can chopped tomatoes 3 tbsp tomato paste 1/4-1/2 tsp black salt, or regular salt 1/2 a block of tofu, crumbled Soy yogurt, lemon and cilantro to garnish Serve with toasted pita chips Method: Fry the onion, garlic and bell pepper in a skillet until tender and frangrant, about 3-5 minutes. Add in the cumin, paprika, stock cube, syrup and chilli powder. Fry another 1 minutes then add in the can of chopped tomatoes and tomato paste. Bring this to a boil, then add in the crumbled tofu and stir though. Add salt and adjust to taste. Garnish with cilantro, soy yogurt and a squeeze of lemon if desired. You can eat this on rice, couscous but I think it is best on bread, especially pita! I've shared stuff very openly before, but this feels like it might be my most vulnerable post so far 😊 Lately I've been creating basically everything in my life with ease and joy (and glory 😉) ... Everything but one thing: a relationship (and I really, really want it). A man, a partner, a lover, the cherry on top of my wonderful life, someone to share all the beauty and magic and adventures with, to be an amazing contribution to each other and create even more magic together. It's been a while and I feel absolutely ready for it to manifest, but it hasn't been showing up - and honestly, that frustrates the shit out of me sometimes! (And it's not like I haven't been asking questions and doing clearings ...) . I am beautiful, intelligent, fun, sensual, loving, playful, positive, uplifting, caring, kind, witty, open, authentic, inspiring, creative, competent, independent, conscious, powerful, active, adventurous, alive, lifechanging, magical, generally awesome and basically unstoppable ... So what the shit is still stopping me from creating the amazing, beyond amazing relationship that I'm choosing to have in my life? Now, it's not like I'm obsessing about this 24/7, and I'm definitely not looking for a relationship as a replacement for a life! I have an amazing life that I love and enjoy very much and I'm super grateful for it ... But I still want that damn cherry on top 🍒😉 . What else is possible here that I haven't acknowledged yet? How can it show up NOW? How do my melons get even juicier? (I just had to throw that in 😅😅😅) . P. S. The way relationships are generally done in this reality: cutting off parts of ourselves to "fit" with someone else, to the point where there is not much of ourselves left ... (I'm certainly not looking for that kind of relationship!) What if there is so much more possible? What if you don't have to divorce any part of you to be in a relationship with someone else? 🍑 ULTIMATE PIZZA DOUGH 📷 by .kitchen 🚨🚨Recipe: Makes 6 pizzas. INGREDIENTS: 1kg strong white bread flour 700g water 15g salt 2g yeast INSTRUCTIONS Throw all ingredients into a bowl and knead well for around 10 minutes. Use a dough scraper to knead it if you have one. Turn and knead briefly for a couple of minutes every 10 minutes for an hour. After an hour, stretch dough out with your hands and return back to the bowl. Leave to rise for at least 4-6 hours. Divide dough into 6 balls to make individual medium base pizzas, or 4 balls to make larger pizzas. Leave shaped balls for another hour to rise. Wrap any dough balls you aren't using up in oiled clingfilm and freeze. Heat up pizza stone or baking tray for at least 15 minutes in your oven, at the hottest temperature (mine will go to about 220•c). If you have a pizza peel, dust well with flour and stretch the dough out with your hands to form a rough base. Try to get the dough under 1.5cm thick for a medium base pizza. Top pizza and use peel to slide onto preheated pizza stone. Cook until golden and puffed up, usually about 8 minutes. Blueberry pancakes with strawberry chia jam 💜 Recipe: Serves 2-3 INGREDIENTS 1 medium ripe banana 1 cup oats 2 tbsp coconut flour 1/2 cup coconut milk 2 tbsp chia seeds, 4 tbsp water 3/4 cup blueberries or 120g Some coconut oil for the pan I don't add any other sweeteners to the pancakes as the topping is sweet. Topping ingredients: 2 tbsp peanut butter 2 cups strawberries, sliced 2 tbsp maple syrup 1 tbsp chia seeds METHOD: Start by placing the chia seeds and water in a cup, mix well and let them sit while you prepare the pancake batter. Place the oats in the food processor and blend until it forms a flour. Add the oat flour to a bowl along with the coconut flour. Next place the banana and coconut milk in the food processor and blend. Add the soaked chia seeds and pulse a few times. Finally add the blueberries and pulse only a couple of times so that you still have whole pieces of blueberries. Add the wet mixture to the flour and mix until the flour is well coated. The batter will be quite thick compared to usual pancakes batter. To make the strawberry chia jam: Place the strawberries in a saucepan with the maple syrup over medium heat. Let them cook for about 5 min until they become watery. Take off heat and use a potato masher or fork to mash the strawberries leaving some chunky strawberry bits. Add the chia seeds and cook for another 5 min on low heat until it thickens. Then set aside to cool. To make the pancakes: Heat 1 tsp coconut oil in a pan over medium heat. Once the pan is hot, add a large spoonful of the pancake mix in the middle of the pan and use a spoon to flatten it. Let it cook on each side for 1-2 min and repeat top with the nut butter of your choice and strawberry chia jam. Enjoy! #letscookvegan #breakfast . . Superfood Chocolate Bark 🤤 Easy sweets baking how I love you! (Although I can't have you until after comp - 10 days and counting baby!) Ingredients 200 g dark chocolate chopped 100 g white chocolate chopped 1 tsp matcha powder 1 1/2 tsp freeze dried blueberry powder handful dried goji berries handful whole raw almonds handful pumpkin seeds 1 tsp bee pollen 1 tsp chia seeds Line a baking sheet with baking paper. Melt the dark chocolate, either in a bowl over a pan of gently simmering water, or in short bursts in the microwave; don't let the chocolate get too hot. Melt the white chocolate in the same way then pour half of it into a separate bowl. Stir the matcha powder into one half and the blueberry powder into the other. If the chocolate becomes too thick, give it a couple of seconds in the microwave to re-melt it. Pour the dark chocolate onto the prepared baking sheet and use the back of a spoon to spread it out into a rough rectangle. Drizzle both white chocolates over the top, reserving a little bit of each. Scatter over the goji berries, almonds, pumpkin seeds, bee pollen and chia seeds then drizzle over the remaining white chocolate. Set aside for a couple of hours at room temperature, or 20 minutes in the fridge until the chocolate has set then use a sharp knife to chop the slab into rough pieces. Store in an airtight container.
