🥞 Banana Waffles w/ Strawberry Syrup ⏲ Under 15 mins | Yields 8-10 Mini Waffles Everyday this week so far, I’ve been trying to cook up all the food that’s close to going bad in my fridge 😅🤷🏽‍♀️. Had some poor bruised bananas that I thought about freezing them for smoothies but then waffles sounded so good 😋 So here’s a simple, healthy, little messy, banana waffles recipe to celebrate #wafflewednesday! (Plus it’s so much fun using my mini waffle maker by @unprocessyourfood) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Waffely Delicious Deets👇🏼 ▫️2 ripe Bananas ▫️2 Cage Free Brown Eggs ▫️1 tsp Cinnamon ▫️1 tsp Vanilla Extract ▫️1 1/2 tbsp Almond Flour (@bobsredmill) ▫️1/2 tsp Baking Powder ▫️1/4 tsp Baking Soda ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Strawberry Syrup Deets👇🏼 ▫️4-5 Strawberries, cubed ▫️1/2 cup Water ▫️2 tbsp Stevia ▫️1/2 tbsp Cornstarch ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the waffles, blend all the ingredients in a food processor or blender. Pour into a waffle maker & cook accordingly. For the syrup, add everything to a pot & bring to a medium boil. Stir frequently until it forms into a thick syrup. Start to stack the waffles. Every 2 waffles, I added some maple syrup, almond butter (@justins), plain Greek yogurt (@siggisdairy), & the strawberry syrup. Continue until you reach the top! 🍳 Sweet Potato Breakfast Cups ⏲ 10 mins Prep Time | Yields 9 Cups It’s all about the breakfast this week! “Meal prepped” (on a Thursday 😂 hence the air quotes) these egg cups which are perfect to store in the fridge/freezer & eat throughout the week for a quick breakfast. It’s Thursday guys, so close to the weekend with Beyoncé 💃🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ EGGcellent Recipe📝 ▫️1 small Sweet Potato ▫️4 Cage Free Eggs ▫️3 tbsp each for 5 Egg Whites ▫️1 tbsp Olive Oil ▫️Shredded Cheese ▫️Salt & Pepper Veggies: ▫️Cherry Tomatoes & Avocado ▫️Onion & Spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Using a grater or mandolin sliced, shred the sweet potato. Then in a bowl, mix together olive oil, shredded cheese, salt & pepper. Divide into 9 muffin tin cups & press the mixture down to the bottom. Bake at 400° for roughly 15 mins. Meanwhile, chop up all your veggies. Once the sweet potato has baked, add in the desired veggies to each. Now time to add in the eggs! I try not to eat too many whole eggs a week due to the yolk being high in cholesterol, so I used a combination of egg whites & whole eggs. So I’m random cups, I added the egg whites & in the rest, I cracked in a whole egg. Again, bake at 400 degrees for roughly 15 mins. {Recipe video tutorial in story highlights}

I teased you babes about this paleo grain-free vegan protein chocolate chip banana bread last night 🍞 🍌 & I simply couldn’t make you wait a minute longer after taking the first bite. IT IS BEYOND DELICIOUS!!!! 😍😋 . It’s light, fluffy, airy, feels like you’re biting into a chocolate banana cloud, full of flavour, naturally sweet but not too sweet, moist, decadent & you’d never believe me if I told you it was THIS healthy. It’s almost too good to be true but I swear... it’s REAL LIFE! . Without further ado, I won’t make you wait much longer! Here’s the recipe & PSA: you might want to warm it up & smother it in almond or peanut butter... JUSS SAYIN! 🤣 . 1️⃣INGREDIENTS: 2 mashed ripe bananas 1 & 1/3 cup almond flour 2/3 cup vegan protein of choice (or sub for 2/3 cup more almond flour if you don’t want the protein) 2 tsp. pure organic vanilla extract 1 tbsp. raw organic creamed honey (I used @peaceriverhoney) 1/4 cup coconut oil 1/4 cup creamy almond butter or peanut butter 1 tsp. baking soda 1/3 cup vegan mini dark chocolate chips 1 tbsp. plant-based milk 2 flax eggs (mix 2 tbsp. ground flaxseed with 6 tbsp. warm water & let sit for 5-7 min.) Pinch sea salt FOR TOPPING: 1/2 banana, sliced . 2️⃣HOW? Prepare the flax eggs. Preheat oven to 350F & line a loaf pan with parchment paper. Mash the bananas & add the other ingredients (except chocolate chips) to the bowl & mix until a batter is formed. Once the batter is uniform, fold in the chocolate chips. Press the batter into the lined loaf pan, making sure to flatten the top & fill the corners & top with the banana slices. Bake for 43-45 minutes until your kitch smells like heaven & tops are browned & bananas are caramelized! I always like to do a knife test to make sure it comes out clean! It should be some kind of Thai curry paste. *** Recipe paste: • 5 big red chilli peppers without the seeds • 1 teasp. salt • 1 teasp. galanga • 3 cm lemon grass • zest of 1 lime • about 8 stalks of fresh coriander • 4 cloves of garlic • 1 white onion • 1 teasp. white peppercorns • 1 tablesp. coriander seeds (roasted) • 1 teasp. cuminseeds (roasted) • 1 teasp. trassi (shrimp paste) • 3 tablesp. oil • 2 large meaty tomatos • Obviously, this is the recipe of just the paste! 🍄 Risotto is a labour of love, but my goodness do I love risotto! • INGREDIENTS Arborio risotto rice Dried porcini mushrooms Glug of white wine Boiling water White onion Garlic Salmon fillet Butter Parmesan cheese Salt Pepper Basil • WHAT YOU NEED TO DO • 1. Boil the kettle. Rehydrate the dried porcini mushrooms in boiling water. 2. Heat the oil in a deep pan over a medium heat, and fry off the onion and garlic before adding in the rice. Stir in the pan to coat, then pour in the wine and stir again. Let the alcohol evaporate from the pan. 3. Remove the porcini mushrooms from the boiling water and chop. Using a ladle, spoon in a ladle full of the mushroom stock water, and gently stir the rice until the liquid has been soaked up, then repeat with another ladle full of liquid. 4. Continue gently stirring the risotto so it doesn’t stick to the bottom of the pan! Repeat the process of adding liquid and letting the rice soak it up, until all the mushroom stock water has gone. Test the rice; if it’s still a little al dente, you can use boiling water instead of stock, until the rice is tender. 5. Meanwhile, wrap your salmon in a tinfoil bag with a knob of butter and pop in the oven. 6. Add in the porcini mushrooms and stir. Season well with salt and pepper. 7. Remove from the heat and stir through the butter. Grate in some parmesan cheese and stir gently. 8. Top with your salmon fillet and serve immediately. Herb-Crusted Baby Lamb Chops with Butternut Squash Purée By Kiki Fisher Photos by Dan Engongoro 1½ tablespoons chopped fresh rosemary leaves 4 garlic cloves, chopped 1 tablespoon dried oregano 1 tablespoon salt 1½ teaspoons black pepper 2 tablespoons olive oil 2 racks of lamb (14 to 16 ounces each) 1. Place the rosemary, garlic, oregano, salt, and black pepper in a food processor and process until minced. 2. Add olive oil and process into a coarse paste. 3. Place the racks of lamb on baking sheet with the rib ends pointing down and spread the paste evenly on top of both racks. Cover and refrigerate for at least 6 hours. 4. When ready to cook, preheat the oven to 450°F. Roast the lamb for exactly 25 minutes for medium-rare and 30 minutes for medium. Remove from oven and cover the pan tightly with aluminum foil. Allow the lamb to rest for 15 minutes. Slice between ribs into individual chops and serve hot or warm. Yield: 6 to 8 servings Cook. Create. Connect. And Enjoy!
