A FALAFEL WAFFLE...yeah you heard me right 🍴 After a intense power hot yoga class on a Sunday morning, it’s only appropriate to brunch with ya best friend. I had to try this new special for a local restaurant...a falafel waffle. It was super crunchy and was sweet and also savory. It had pieces of whole chickpeas inside which helped break up the texture! It was topped with a vegan tzatziki sauce, cherry tomatoes and on a bed of arugula. I can’t wait to get this again ASAP 🤤

There's just over a week until the 4th and I'm so excited about it this year. I actually haven't sorted out any plans yet but regardless I know the day will involve some baking and time with my favorite people. What are your plans? Sal y pimienta Ajonjolí negro al gusto Preparación: 1. En un recipiente coloca el pollo y marinalo con el aderezo de ajonjolí, sal y pimienta. En la nevera mete el recipiente con tapa por una hora. 2. En una sartén a fuego medio sofríe con el aceite de ajonjolí la cebolla, el chile dulce y el ajo. Agrega sal y pimienta al gusto. 3. Asa las tiras de pollo, al rededor de 7 minutos. El truco es ir asando de poco en poco para lograr q queden doradas las tiras. 4. Mezcla las verduras y el pollo. Decora con ajonjolí negro. Puedes acompañar el platillo con arroz al vapor con soya y edamames.

Now that it is almost picnic weather again, I am going to try my best to create some more lunch recipes for you all. ⛱To warm things up a bit, these are my current fave open sandwich combos: 1. Falafel, mayonaise, cucumber, cherry tomatoes 2. Melted cheddar, white sauerkraut, chilli, radishes (both on a base of my fave seeded sourdough) . 🍞Sourdough bread uses a bacterial & yeast culture in place of the OG yeast starter to create the rise and structure of the bread, bringing a signature tang to the bake. Fermented foods seem to be having a spot of the limelight recently, and the reasons for this are not without scientific support. . 🦠Fermentation is an anaerobic process (doesn’t use O2) whereby bacterial enzymes convert sugars to alcohol, or by yeasts into lactic acid (the enzymes secreted from microorganisms are what creates the signature tangy taste). . 🔬Fermented foods come underneath the umbrella term ‘functional foods that are know to have a positive effect on human health’ but the method has been used for hundreds of years as a way of preserving foods. . 🧬Fermented foods contain an abundance of microbial communities and enzymes, which sound like the last thing that you want in your food. 🦠However, these guys are critical in maintaining and growing your gut microbiota. Probiotic bacteria are traditionally used in fermentation and are known to be crucial for immune and gut health; with probiotics in the form of fermented foods actually shown to be more efficient compared to probiotics alone. . 💊Alongside this, the process of fermenting makes the vitamins and minerals within the food (especially in sourdough) more bioavailable and therefore easier to use by our body. . 🥪All in all, they sounds a little bit odd but adding more fermented foods into your diet is only going to be a good thing. For those with IBS they help to support a healthy gut microbiome which is key to aid symptom relief, and for those with non-celiac gluten sensitivity you may be able to tolerate fermented sourdough better than normal wholewheat.

I’m on Day 4 of no sweets and treats!! 😍🎉 One thing that I noticed that helps me a lot with sugar cravings, is to make sure that I start my day with a good breakfast that includes protein, a whole grain carb, veggies, fruit and healthy fat! And of course, JESUS! 🙏🏻 This satisfies my body first thing in the morning so that I don’t go looking for donuts, muffins or candy mid-morning! Fried chicken wings 🍗 my first time trying deep fried chicken wings with the batter recipe from @babycakesmenow - it’s a beer 🍺 based batter, which I twice cooked. I still need to work on adjusting the flavour and the batter consistency. But it sounds like the texture is just fine from my taster @christinecomelli 😉 (turn on the sound 🔉to hear the crunch!)

Steamed Monkfish in a garlic, soy sauce and sesame oil sauce with pomegranate 🐟🌱 I love this delicate, meaty fish so much and it works so well in this dish! Recipe posted below -👇🙆🏻‍♀️ - Cut the monkfish tail into smallish chunks and place into a sesame oil lined steamer (to stop it sticking) after it has come to the boil. Steam for 3 - 5 minutes or until monkfish is just cooked. Meanwhile in a pan, gently sauté crushed or thinly sliced garlic and ginger in sesame oil, then once slightly browned, add 2 tbsp of light soy sauce and gently simmer for a few minutes. Turn the heat off the pan and add the monkfish, gently spoon over the sauce onto the fish. Then serve up with some jasmine rice, and top with spring onions, sesame seeds, chopped chillies and fresh pomegranate 🍚🙏 - Yum! Spicy Cauliflower Soup, creamy, spicy and vegan 🌿 It's ok to have soup in June, especially when June feels like November! 🌧️ __ There's a clickable link in the bio or save this and make it later 😉 Recipe serves 4. _ INGREDIENTS: 1 tbsp olive oil 1 medium yellow onion (170g) finely chopped 1 stalk of celery finely chopped 2 cloves of garlic minced 1 large floury potato (230g) I used a Maris Piper potato peeled then cut into small cubes 1 medium head of cauliflower (530g) leaves and stalk removed then cut into florets 2 level tsp cumin 1 tsp ground coriander 1 heaped tsp garam masala 1/4 tsp dried red chilli flakes 1 litre vegetable stock 1/4 tsp sea salt 1/4 tsp freshly cracked black pepper plus more for serving A small handful of chopped chives for serving. FOR THE CHICKPEAS 1 400g can of chickpeas drained, rinsed then patted dry 1 tbsp olive oil 1 heaped tsp ground cumin 1/4 tsp sea salt 1/4 tsp freshly cracked black pepper. __ INSTRUCTIONS: Heat the oil in a large saucepan, add the onion and celery and cook over a medium heat for about 10 minutes. Then add the garlic and cook for about a minute. Next, add the potato and all the spices. Stir well and cook for a few minutes. Finally add the cauliflower florets, the stock and the salt and pepper. Bring the pan to the boil then reduce and simmer for about 15 minutes or until the potatoes are cooked through and the cauliflower is soft. Check the seasoning, I usually add a little more black pepper. For a really smooth and creamy soup blend the soup in a blender. Serve immediately with a tablespoon of the crispy chickpeas and some chopped chives.  FOR THE CHICKPEAS: Preheat the oven to 210 degrees C/ 410F. Drain and rinse the chickpeas then pat them dry. Tip them onto a baking tray, add the olive oil, cumin, salt and pepper and toss well. Place on the middle shelf of the oven and bake for about 30 minutes. Or until they are nice and crispy. APRICOT MUSTARD GLAZED SALMON and CRISPY GREEN. . BEANS with a TAHINI CRACKER CRUMBLE. . How to?: wild salmon (salt and pepper), and seared in coconut oil for 2 minutes skin side up. Flip and glazed with a glaze made from 1 apricot (flesh only) blended with 1 tablespoon water, 1 tablespoon coconut aminos and one tablespoon Dijon mustard Then baked on 400 for 5 minutes. Green beans (blanched in boiling salt water for 2 minutes) then pan seared in some coconut oil and minced garlic with salt/pepper to taste. Crispy sourdough croutons, creamy blue cheese, punchy fennel and a zesty lemon dressing; the perfect combination of ingredients go into this star salad recipe. Ingredients 100g of @DorsetBlueVinny cheese, broken into chunks 3 sourdough bread slices Olive oil for frying 2 small (or 1 large) fennel bulbs 8 red radishes 4 celery sticks, still with the leaves on if possible 4 handfuls wild rocket 1 tbsp chopped fresh tarragon For the dressing 1 tbsp lemon juice 1 tsp sherry vinegar 1 garlic clove, crushed 2 tbsp extra-virgin olive oil, plus an extra splash to serve Method To make the dressing, mix the lemon juice and sherry vinegar in a large bowl along with the crushed garlic, then gradually whisk in the 2 tbsp extra-virgin olive oil. Season with plenty of sea salt – a good 2-3 pinches – plus some freshly ground black pepper. Set aside (see Make Ahead). Tear the bread into rough 1.5cm chunks. Heat a few splashes of olive oil in a frying pan and toss the bread chunks in it over the heat for a few minutes until just golden brown and crunchy. Season with salt, then set aside on kitchen paper to cool (see Make Ahead). Slice the fennel as thinly as possible – on a mandoline if you have one – and keep any herby fronds to garnish. Do the same with the radishes. Pull the leaves from the celery (don’t discard) and thinly slice the sticks. Add the fennel, radish, celery and rocket to the bowl with the dressing. Add the croutons and half the cheese chunks and toss lightly together. Divide the salad among plates or wide bowls and scatter the remaining cheese over the top. Ciambellona morbidissima 🍩 Ottimo per soddisfare la voglia di brioches 🥐.... una buona alternativa alla solita colazione... #senzaglutine e #proteica ! Da provare!! . Ingredienti 📝 500g di albumi 300g di zucchero 200g di farina di riso 8g di lievito vanigliato Un pizzico di sale Procedimento 👩‍🍳 Montare gli albumi a neve con uno sbattitore elettrico. Aggiungere sale, lievito e poco alla volta lo zucchero, fino a farlo incorporare tutto. Si ottiene così un composto gonfio, compatto e lucido. A questo punto aggiungete la farina di riso setacciata, incorporandola servendosi di una spatola, dal basso verso l'alto, per non smontare il composto. Versare quindi in una tortiera a ciambella (senza imburrare) e livellare in superficie. Infornare in forno preriscaldato 40 minuti a 180°. Terminata la cottura, spegnere il forno, socchiudere la porta e lasciare intiepidire il ciambellone per qualche minuto. Fare raffreddare, quindi estrarlo servendosi di una spatola.
