Have been thinking what to cook since morning... Have a pack of chicken rice paste sitting in the cupboard for quite a while so decided to cook chicken rice. Have lots of vegetables left from last Sunday steamboat so the easiest way to use them up is to cook a pot of soup. Laziness = Deliciousness. When it’s been a long day and there’s little energy left. I decided to make another pasta dish..... but after tasting the accompanying “sauce” I decided the pasta wasn’t going to happen...... this was going to be eaten on its own. And I don’t regret my decision...... So in my pot I put some oil...... then added some cut up chicken thighs, diced bacon (pre diced from a packet of course) some sliced mushrooms leftover from last nights dinner, 3/4 of a jar of tomato salsa, 1/4 jar of pesto, a small can of coconut cream, some rosemary thyme and basil (my three favourites) stir and bring to the bubble then turn down the heat and let simmer for 20 minutes with the lid on. It's a birthday at our house...which means blueberry pancakes! After a long search for the perfect blueberry pancake, I think I've finally found it. Google NY Times Buttermilk Pancakes....it's legit! So super fluffy and perfect, you'll feel like you're eating at a quaint B&B on the east coast. But here's my best pancake tip: curb the need to mix until the lumps are gone...be okay with the batter being lumpy. Just let it rest for 10-15 minutes (actually you can make this recipe up to an hour in advance by resting it in the fridge instead of the counter). Dinnertime! I steamed up fresh broccoli, cauliflower, baked sweet potatoes, & pan fried a round steak. SO GOOD! I'm starting to get the hang of cooking steak. That medium rare zone with juicy goodness. 😘 I made so much food that I couldn't finish it in one sitting. This steak was a perfect cut for me & relatively cheap. This was a $8 steak. • Creamy Garlic Chicken and Broccoli • This has to be hands down, one of the easiest meals I’ve ever put together! Also one of the tastiest 😋 a squeeze of fresh lemon definitely kicks it up a notch. Also, this recipe doesn’t call for it, but you know I had to top it with a little Parmesan cheese ;) #mamaseasymeals #homecookedmeals #mealtimefavorites #instafood #instagood #foodporn #foodgasm #mealsformoms #easymeals #easydinners #simplemeals #simpledinners #easymealsformoms #simplemealsformoms #eatthis Ingredients: 2 lbs boneless skinless chicken breast Salt, to taste Cracked black pepper, to taste ½ t paprika 4 T butter, divided 4-5 cloves garlic, minced 1 (10.5 oz) can condensed cream of chicken soup ¾ c water 2-3 c broccoli, chopped 1 t fresh parsley, chopped Lemon wedges, optional Instructions: Season chicken with salt, pepper, and paprika. Heat a large pan on medium high heat. Melt half the butter (2 T). Add the chicken and cook for 5 minutes on each side or until the chicken is browned. Remove chicken from pan and keep warm. In the same pan, melt the remaining butter, add the garlic and cook until lightly brown and fragrant. Whisk in the cream of chicken soup and water. Cook until the mixture is hot and bubbly, then turn heat down to low. Add the chicken and broccoli back into the pan, cover the pan and cook for about another 10 minutes or until the chicken is cooked through. Serve with rice or pasta and wedges of lemon. Garnish with fresh parsley. Enjoy hot.

Coated the pan in coconut oil spray then coated the chicken with salt and a salt free all purpose blend. Air fried 5 or 6 at a time, depending on size, for 22 min at 360. So easy. So delicious and cooked perfectly. I also air fried the broccoli, just a bit more oil in the pan and a few sprinkles of salt and pepper. I’ve got a standard-sized freezer on top of my fridge (no deep freezer yet!) and that puppy is packed to the brim with seafood, bread, cooked beans & grains, nuts, stock & individual containers of soups. Oh and ice cream!! . Utilizing the freezer is one of my best tips for meal planning & prepping. Making brown rice for dinner? Might as well cook extra and freeze some! So for tonight’s dinner, I dipped into the freezer and pulled out some cooked corona beans. One of my favorite kinds of beans—so buttery & luscious! One of the suggestions @kathyfreston lists in her book, "The Lean", is eating a "big bowl of love" (aka #salad 🥗) every day. Not going to lie it was hard starting this routine but as on today I've gone two weeks eating a salad every day - something that's helped me is simplicity. I’ve had a lot of new followers, so one thing to know about me, I have 4 babies who love a good meal at breakfast, lunch, and dinner😂🤷🏽‍♀️. Quick canned/boxed soup hack for an easy dinner (or lunch) for one. Canned lentil soup usually falls flat in flavor and can be mushy. A little curry powder and fresh lemon juice brighten it up, and quick sautéed greens add texture and bulk. I always have a few canned soups in the pantry for those nights we’re all sort of “on our own” for dinner. Here’s what I did... • Heat 2 tsp coconut oil in a small saucepan. Add a couple handfuls washed/chopped kale and sauté until wilted, about 2 minutes. Add a 17-19oz can or box of lentil soup plus 1/2 tsp curry powder. Bring to a simmer and cook until heated through. Stir in a squeeze of fresh lemon juice to taste and fresh cracked black pepper.

Earlier today my Mum mentioned zucchini fritters so when I realized I was ravenous and I’d worked through dinner time, my stomach yelled FRITTERS BITCHES! . . There’s so much garlic in here that nearby I think an entire coven of vampires dropped dead(er) 😂 . . . Whole meal took about 15 minutes to throw together. When did I get to the place where I saw meals like this—PB&J SANDWICH + SIDES—as not adult enough? Not good enough? This season of low-capacity (see previous posts) has taught me that I don’t have to always be doing something and that my meals don’t have to always be cooked-from-scratch-perfect...whatever that means. This meal WAS perfect. It was simple, nutritious and didn’t require lots of thought or effort and allowed me to spend my time and energy in other ways. I hope I don’t fall back into putting so much pressure on myself in the future. I hope I learn and grow from this harder season of occasional depression..when I don’t feel like doing anything/cooking anything..and learn that I will be okay! PB&Js make for great lunches!

Forever in a love affair with tacos, and any & all things I can make into a taco inspired meal. I’ll just leave you with the recipe right here 👇 . Loaded Taco Spaghetti Squash 🌮 Serves 4-6 1 medium spaghetti squash ½ medium yellow onion 2 cloves garlic 1 lb ground turkey 1 can black beans, rinsed 1 (10 oz) can diced tomatoes with jalapenos and cilantro OR diced tomatoes with green chiles 1 cup sliced mushrooms ½ red bell pepper, thinly sliced ½ yellow bell pepper, thinly sliced 2 cups frozen spinach 1 tbsp avocado (or another high heat) oil 2 tsp cumin 1 tsp chili powder ½ tsp paprika Salt & pepper to taste . For the squash: Preheat oven to 350F Cut spaghetti squash in half and scoop out seeds Place squash in a baking dish with 1 inch water, flesh side facing down Bake squash for 45 minutes Remove from oven and let cool Using a fork, scrap squash into a bowl Keep the skins . While the squash is baking: Heat avocado oil in a large pan Cook onions & garlic until they become fragrant Add in peppers and mushrooms to cook for another 5-7 minutes Add in spinach, black beans, diced tomatoes and spices Let the mixture simmer to reduce the liquid from the canned tomatoes Remove from the pan and place into a large mixing bowl In the same pan, cook the ground turkey and transfer to mixing bowl when cooked . Add squash and turkey-veggie mixture to the same large mixing bowl Combine together and divide into the two spaghetti squash skins Place back in the oven to heat up with either non-dairy queso or shredded Mexican cheese until melted

When the @bbscfoundation_ reached out to me to help spread the word and share their #eatwithafrica campaign, all I could say was yes. I am proud to take part of the change, for better in our world. Everytime I cook for myself, then sit in front of my plate full of food, all I can think about is gratitude. We take food for granted way too much. I remind myself everyday how lucky I am to have a day full of meals when some people aren’t able to eat even one meal every day. The BBSC is a foundation that pays for children living in poverty to go through complete schooling in Ghana. To make is happen they launched the Community Food project which now provides 300 meals daily to the Children in Ada, Ghana.
