I’m sorry I’ve been MIA the past week, but all my family was here for my graduation and barely had time to be on my phone. The last few days have been happy and sad full of celebrations, but also many goodbyes. I’m ready for this new chapter of my life as a college graduate. Doing my Sunday meal prep - lots of organic veggies and greens, good quality proteins, and healthy fats! I also experimented with a few new things. . Picture 2 is a pumpkin seed, cilantro, coconut oil, olive pesto for high quality healthy fats! . Picture 3 was a baked egg dish I made with 6 pasture raised eggs, coconut milk, and tons of organic veggies (yellow squash, radishes, green onions, and Swiss chard stems). . I also made (picture 4) an egg salad with hardboiled eggs, celery, green onion, and olives! Excited to try this out!

Your choice of chicken OR steak fajitas! #onepanmeal 💃🏻 . This recipe is SO simple yet so amazing! You can use it as a quick to the table family dinner or to fill those lunchboxes or snack portions ahead!! . Either way, give a wash & rough chop to a few peppers, onions, mushrooms, zucchini, chicken breasts or thighs and a steak or 2. Add it all to one big sheet pan and drizzle with olive oil. Give it all a generous sprinkle of your favorite clean taco seasoning, I used half @primalpalate Adobo and half of their Meat & Potatoes Seasoning for a perfect and Whole 30 approved amazing flavor! Bake at 425F for about 25 minutes or until the Chicken is fully cooked or 165F! Guess who's back on their #mealprep status!?! 🙋🏾 I'll be finishing the last two meats of this prep tonight (Sautéed lemon lime chicken and roasted salmon teriyaki). Pictured above, we have an 8 day Breakfast biscuits prep. For lunch, there are two options, Salad Jars or Jamaican jerk ground turkey, w/ roasted sweet potatoes and spinach. For the salad jars, I have my go to homemade dressing (lemon, agave nectar and olive oil w/ a little salt and pepper) 🤗

On my day off (not necessarily Sunday), I cut all my veggies, make some rice and pasta for the week, and make my meals for the next three days, and they go to the fridge. So, on Saturday morning I just need to finish the meals for Saturday and Sunday. Then the week start again on Monday. Find humor today and always! • • • 💩💩💩A little fun story for you today. My daughter is fully potty trained in the sense that she knows very well how to pee and poop on the potty. She knows when it's coming and what to do. ...however...we have been through a few phases. Phase 1: Poop on the potty for maybe a few weeks Phase 2: not pooping on the potty but in the underwear :( Phase 3: asking for a diaper before going poop And then TODAY... • • • PHASE 4.. <<has underwear on..promises to poop on the potty>>. "mom, I need you to change me I have poop" <<as I notice her pants inside out>> me: " you went poop in your underwear??" Her: "no, silly..i put a diaper on myself and went poop" 😂😂😂 creative kid...couldn't help but laugh. Find the humor in your day if you can! We all get frustrated. But I have to remember when will get there will help and time :)

Forgot to post my meal planning tip yesterday. Oh well, it works perfectly for today! When planning dinners for the week, plan for two or three dinners that use the same ingredients. For example, when grilling cheeseburgers for this week’s meal plan, I cooked up a couple extra corn on the cobs to use with Mexican street corn the following night as a side for tacos. Last week, I bought a rotisserie chicken for one night and used leftover over chicken another night to make BBQ chicken flatbread. This is a great way to avoid wasting food while still enjoying recipes that don’t taste like “leftovers”! #mealplanningtipmonday

#sundaymealprep on a Monday

Made a favourite recipe from @deliciouslyella! A little Buddha bowl with some added miso broccoli and Ikea (emptying my pantry) spicy grains. I modified the recipe by adding mushrooms, more black beans and broccoli. 1) Prepare grains as per the directions on the package. 2) Sautee two cloves of garlic, a can of black beans, half a bag of spinach, 8 large chopped white mushrooms, 2 tsp of miso paste and 2 tsp of tomato paste. (I used about a tbsp of both because I used the full can of beans). 3) In a large wok heat up 1 tbsp of olive oil at medium and throw in two chopped heads of broccoli. Steam for a few minutes then add 1 tbsp if miso paste and 2 tbsp of water. Add lid until water simmers slightly and makes a broth. Add a few more tbsp of water and coat broccoli in miso mixture. Steam for a few more minutes until desired tenderness of broccoli. 4) Serve with grain mixture and black bean mixture. 5) Top with chili flakes and avocado (not pictured because this is meal prep yo!) MEAL PREP MONDAY: Asian Slaw with Chicken, Dry Roasted Peanuts and Peanut Dressing 🥜 After a long weekend of eating & drinking and only a few shorts days before we start all over again, it is especially important that we ate healthy this week. I made the chicken using my @anovaculinary sous-vide cooker and it turned out super moist! I combined @preschoice cole slaw and broccoli slaw mix for the base and made the peanut dressing (recipe ⬇️). Enjoy the short week and happy Victoria Day fellow Canadians! 🇨🇦 #mondaymotivation • • • • Asian Peanut Dressing (adapted from @busybakerblog) 1/4 cup natural peanut butter 3 tablespoons liquid honey 2 cloves minced garlic a pinch sea salt 2 tablespoons light soy sauce 2 tablespoons rice vinegar 2 tablespoons lime juice 4 teaspoons grapeseed oil 1 teaspoon sesame oil a dash sriracha Mix all ingredients well & serve over salads.

Yesterday’s grocery haul! It’s so funny to look at it and see a sea of green to decipher what’s actually included. Felt good to come home to a full fridge and goodies ready to be prepped for the week to come. . . How do I choose what to buy each week? What it really comes down to for my household is having staples we always have on hand as well as having a routine. . What are some tricks we’ve learned? . 🍴We plan out our breakfasts and lunches to be routine for our workdays. For example, my lunches are always a smoothie and his all week includes a complex burrito. This lets us to know ahead of time what fuels us for the day and how to build our grocery lists for the week. Makes things SO EASY. Good thing is that neither of us get bored easily! . 🍴We are particular about the source and ingredients in our food. There are a few stores we frequent because we’ve found the staples we enjoy at the value we want. . 🍴Even though we buy similar things each week, we change up how we eat them based on HOW we cook them, and WHAT we flavor them with as we cook. The same ingredients can taste VERY different (and still delicious!!) depending on cooking style & the spices or healthy condiments that are used. . . Roasted cauliflower with a sticky sesame glaze Started w half a head of cauliflower in the oven on 425 for 30. No oil. No salt. Plain cauliflower. For the glaze: 2 tbsp rice wine vinegar 1 tbsp agave syrup 1 tsp chili powder 2 tbsp garlic powder 2 tbsp water 1 tbsp Heated sesame oil 2 tbsp liquid aminos Mixed all in a small pan Brought it to a slight simmer and then added a tapioca starch slurry to thicken up the glaze Took it off the heat and then in a mixing bowl i drizzled the glaze all over the cauliflower and tossed lightly Toasted sesame seeds in the oven for 2 mins then topped it on the cauliflower and finished with chopped cilantro . . . . . . . #cauliflowerwings #cauliflowerrecipes #easymeal #easymealprep #sundaymealprep #veganlunch #vegandinner #veganappetizer #yummyveganfood #easyveganrecipes #healthyrecipes #recipeoftheday #foodphotography #foodgasm #feedfeed #veganfoodie #veganfeed #tastyfood
