It's the time of year for... PUMPKIN! 🎃 ⠀ ⠀ Pumpkin Apple Protein Muffins: ⠀ ⠀ 1 15 oz can 100% pumpkin⠀ 1 cup liquid egg whites⠀ 6 tbsp brown rice syrup⠀ 5 tbsp natural peanut butter⠀ ⠀ 1 tsp vanilla⠀ 3 scoops vanilla protein⠀ 1 cup sprouted wheat flour ⠀ ⠀ 1/4 cup coconut flour ⠀ 1.5 tsp baking powder⠀ 1/2 tsp baking soda⠀ 2 tsp cinnamon⠀ 2 medium apples, peeled & diced ⠀ coconut oil spray⠀ ⠀ INSTRUCTIONS⠀ :⠀ • Heat oven to 350 degrees⠀ ⠀ • Whisk together wet ingredients - pumpkin through vanilla. Add all dry ingredients (protein powder through cinnamon) and⠀ stir to combine.⠀ • Fold in diced apples.⠀ • Spray muffin tins well with coconut oil spray.⠀ ⠀ • Divide mixture between muffin tins (they will be heaping - drop the tin on the counter a few times to compact the mix so that⠀ you can pile these up).⠀ • Bake 30 - 35 minutes, until toothpick inserted in center comes out clean. HEALTHY LIFESTYLE 💪🏽🌿😍 I am not currently working towards any fitness goals right now but to continue to live a healthy lifestyle 🙌🏽 I am getting fitter, stronger & feeling amazing each day with my workout current routine ✨ these longer, warmer days are perfect to be outside more when I get home to our farm from the busy city life where I work each day! Chorizo and sweet potato hash 🍳🍳 Another night with “what can I throw together based on what’s in my fridge?” Tonight I still used some leftover potatoes and this girl always has eggs and chorizo available, so this is what we came up with! It’s definitely a spicy 🌶 one! Ingredients: 1. 140g chorizo 2. 300 g roasted sweet potatoes (see my previous post for directions!) 3. 100 g onion 4. 1 clove chopped garlic 5. 4 eggs Directions: 1. Place large skillet over medium high heat. Put in diced onion and chopped garlic. Allow to cook until onions are translucent. 2. Put chorizo into pan and allow to cook mostly through. 3. Place already roasted potatoes into pan with chorizo. Lower heat to medium and allow to cook together. 4. Meanwhile, fry eggs in separate pan. Be sure the yolk is runny for maximal flavor 😁 5. Once eggs are complete, divide the sweet potato and chorizo mixture into two even portions. Place two eggs on each plate. 6. If you’re feeling like you need some greens, add those to freshen it up! Like I did for mine! 😁 Overall, simple, delicious, filling meal. “If you fail to plan, you plan to fail” ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ It took me years to realize that structure and discipline actually create more freedom in life... ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ If I could make only one suggestion to get you on the right track to better eating habits, it would be to take one day of the week to prepare your meals in advance...aka #sundaymealprep ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I take it one step further by ordering the meat portion of my protein sources from @trulocal every 3 weeks (organic & antibiotic free 😍) and cooking it ALL at once. Then I portion out a few meals worth of food and freeze the rest, taking it out little by little as I need it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Batch cooking is an amazing time saving option if you’re OK with having your meals “fresh from the freezer”🤣 When it’s sealed and packed properly, I really don’t taste a difference 🤷🏽‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’ll usually also make a pot of soup or chilli, a few overnight oat jars for breakfast, and chop up a bunch of veggies for salads 🥗 Sweet potato, Ezekiel bread, and basmati rice and usually my starchy carbs of choice and I’m good to go for the week 💃🏽 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ If the food is prepped, I really have no excuse to eat out and make unhealthy choices! And it only takes 10 minutes in the evenings to mix and match the options I’ve pre-made and portion out my food for the following day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Getting control of what goes into your mouth really is 80% of the battle and will lay the foundation for a better body composition - your workouts are just the cherry on top that multiples your results 🙌🏽 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 📷 @calories.hub

Asian Style Chicken Nuggets With Lemon Glaze By @damn_delicious ❤️ ---- Ingredients: 1/4 cup rice vinegar 2 tablespoons reduced sodium soy sauce 2 tablespoons mirin 2 tablespoons sesame oil 3 cloves garlic, minced 1 tablespoon freshly grated ginger 2 green onions, sliced 6 boneless, skinless chicken thighs, cut into 1-inch chunks* 1/2 cup vegetable oil 1/3 cup all-purpose flour Zest of 1 lemon . For the lemon glaze: 1/4 cup rice vinegar 1/4 cup freshly squeezed lemon juice 3 tablespoons sugar or sweetener 1 tablespoon cornstarch ---- Instructions: In a large bowl, whisk together rice vinegar, soy sauce, mirin, sesame oil, garlic, ginger and green onions. In a gallon size Ziploc bag or large bowl, combine rice vinegar mixture and chicken; marinate at least 1 hour, turning the bag occasionally. Drain chicken from the marinade, discarding the marinade.Heat vegetable oil in a large skillet over medium high heat. Dredge chicken in flour. Add chicken to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate. To make the glaze, combine rice vinegar, lemon juice, sugar, cornstarch and 2 tablespoons water over medium low heat. Bring to a boil, simmering until thickened, about 1-2 minutes.Serve chicken immediately, tossed or drizzled with the lemon glaze, garnished with lemon zest, if desired.

As you can probably tell from my stories I LOVE fall b/c it’s the perfect running weather 🏃🏽‍♀️🍂 . ...however, I also love fall b/c APPLES are in season and 1️⃣ they’re fun to pick 2️⃣ I love incorporating them into more of meals and 3️⃣ they are one of my favorite pre-run or pre-workout snacks!! 🍎🍏🍯🥜 . I cut up 1/2 - 1 apple depending on the size, add a tbsp of my favorite nut butter, and sprinkle a bit of cinnamon on top! It gives me the energy I need to exercise without making me feel overly full! 🙌🏽 . Winner winner chicken dinner! 🍗 I had a random craving for drumsticks, so I whipped up these Classic Crispy Drumsticks and boyyyy are they packed with flavor! & I had plenty of leftovers for the week ahead 😋 ⠀ .⠀ .⠀ I got a little carried away and forgot to measure my seasoning exactly, but here is my recipe [feel free to add more or less of what you love and make it your own!] 🍗⠀ .⠀ • 10 drumsticks⠀ • 2 tsp garlic powder (or granulated garlic)⠀ • 1 Tbsp onion powder⠀ • 2 tsp paprika⠀ • 2 Tbsp pepper or pepper blend ⠀ • 1 tsp sea salt⠀ .⠀ Preheat oven to 425. Rinse drumsticks and pat dry. Mix the spices in a mixing bowl. Add in the drumsticks one at a time, coating them with the spice mixture. Place drumsticks on a baking sheet greased with olive oil and cook for about 35-40 minutes or until drumsticks have reached 180 degrees 🍗 [the cooking temp is slightly higher than the recommended safe chicken temp for texture and crispness]. Serve with @lotusfoods rice and asparagus - or your fave veggie and side dish! 😋 I also love this with potatoes and broccolini 🌱⠀ . I would love to hear what you think of this recipe if you make it!
