-Week 2 of the zero carb/carnivore experiment. This week I’ll be alternating between brisket for one meal and ribeye & a brat for the other. -I’m still not sure exactly how much to eat so I also have some ground bison ready as a potential add in if necessary. -So far I’ve noticed better energy at the gym to the point where I haven’t been taking a preworkout. -I’ve also noticed that when I’m hungry, the hunger is a lot more intense than on keto. Weekly Healthy Affordable Sunday Meal Prep: Paleo Protein Muffins, my main this week is pretty low carb and to stick with the throwback theme here is the oldie but still a goodie: • 2-3 ripe bananas • 3 eggs • 1 tsp pure vanilla extract (optional) • 1 tsp cinnamon • 1/2 tsp baking soda • 1/2 tsp baking powder • 1/4 tsp salt • 3 cups almond flour • 1/4 cup dark chocolate chips * Fat of choice (I use ghee) DIRECTIONS - oven to 350 (I have a mini muffin maker machine) oiled muffin tins - Blend everything except the flour and chocolate - Fold in flour then chocolate (don’t over mix) - Bake 30 Min. For regular sized muffins (7-12 Min. Going back to work tomorrow after 12 days off is going to be rough. School starts this week for my teenager, too. Meal prep for the week: 5 containers of broccoli, zucchini, red bell pepper, and red onion. In the large container I have celery and romaine. My meal prep for the week is fairly simple due to my Keto Chow, but I did make some hard boiled eggs in about 5 minutes thanks to my #instantpot ! - 1️⃣ place rack insert 2️⃣ add 1 cup water 3️⃣ place 7 eggs 4️⃣ lock lid, set on sealed, program manual 4 minutes 5️⃣ manually release pressure when ready and immediately transfer eggs in ice bath 6️⃣ store in fridge and peel under water when ready to eat! - - #easyketo #keto #lowcarb #lchf #ketosnacks #protein #sundaymealprep

This weekend was a busy one! Fun filled times with family and friends. • On Sunday’s I like to unwind and get mind focused for the next week. I always spend time with my little guy, who is crawling and I’m loving it! • Because I needed a quick meal plan this week, I grabbed a @campbells sauce and put it in the crockpot (I know it’s for the skillet, but I am too lazy this Sunday). The macros on the sauce aren’t bad considering that a serving size is 1/4 cup and I won’t use all of that in one serving. I measured out my chicken to 6oz for lunch instead of 4oz for the extra protein. • I paired the chicken with 1/2 cup of white rice (10 minute easy rice) and steamed microwave broccoli! • Meal prep doesn’t have to be hard, just be consistent so you aren’t stopping at fast food throughout the week.
