This goes for many of my goals..from exercise, development for the kids and my own business goals etc. Working hard can have it's ups and downs but in the end it's so worth it. Feels amazing and so many benefits come from it. I also want to make sure I teach my kids how to work hard at their own goals and tasks daily. Teach by example! You got this momma!

Confession...I used to have a pretty big snack drawer at work. It was always full of my go-to's...kettle chips, goldfish crackers and chocolate anything. . I was a boredom eater at work and who knows how many calories I would aimlessly eat on any given day. I'd try to track it for a few days but it never lasted long or went well. . Then these magical food containers came into my life and taught me the right way to eat. Pretty soon my snacks had changed to veggies and hummus, almonds or frozen grapes and guess what?! My whole world changed!! . Not only did it get a whole lot more colorful but all of a sudden, all my fitness goals were coming true and the weight was falling off! I don't find myself eating out of boredom anymore either because my body is now getting the nutrients it needs and therefore the cravings have stopped. . What a win in so many ways!! 🙌🏼💚💙

This week’s meals have all been a hit! Potato soup, roasted vegetable Buddha bowls, for protein: roasted chicken shawarma, pulled pork, and hard boiled eggs. These Egg & Sausage Muffins for breakfast were SO quick and easy! 🍳 Mix together: • 6 large eggs • 8 turkey sausage links- cut up • Splash of milk • Sliced onions • Red and green bell peppers • 1/4 cup shredded cheddar cheese • Garlic powder, Everything But The Bagel seasoning, salt and pepper to taste. Whisk them all together and place 3/4 of the way full in a lined/olive oil sprayed muffin tin and make for 25 minutes! I top with a pinch of cheese when I take them out of the oven, then let them cool. I also usually eat them with salsa. 😋 SUPER quick and easy, plus healthy! The recipe below makes one 400-calorie serving. ⠀ ⠀ Ingredients:⠀ ✅ 3 eggs⠀ ✅ ¼ cup non-dairy milk ⠀ ✅ 2 tsp dried basil⠀ ✅ salt & pepper to taste⠀ ✅ 1 Tbsp coconut oil⠀ ✅ 1 medium onion, diced⠀ ✅ 1 cup mushrooms, diced⠀ ⠀ Instructions:⠀ 1. Preheat oven to 350°F (175°C). Grease the muffin tin with half of the oil and set aside.⠀ 2. Whisk the eggs and milk well in a large bowl. Add seasonings (optional: basil, salt, pepper).⠀ 3. Peel and chop the onion. Wash and chop the mushrooms.⠀ 4. Heat a stovetop pan over medium heat and add the rest of the oil. Add vegetables and cook for 5-8 mins. Stir often.⠀ 5. Had one of those, “this is hard, I don’t want to do this,” moments today. But in all honesty, a stressful week will do that to me. I get out of my routine and allow negative thoughts to creep in - doubts of whether all the work of meal prep and working out is worth. Yup. I have those thoughts  once in a while too…. _ As I was laying on the couch with Nat. The door bells rings. I open the door in my pjs and messy bun, half awake and tired. At my feet was a bag from a local food service. What the heck? I open the bag to find 10 meals prepped and prepared. Specifically for me and according to my current meal plan. “I know you have had a rough week, thought you needed a break” _ COME ON. Just when you think your husband doesn’t listen to a darn thing you say- He comes swooping down outta nowhere and makes me feel like the luckiest girl in the world. _ Ahhhh just so thankful we have have each other. To tackle the ups and downs of life, to encourage and push each other when the going gets tough. _ Find someone who shares your passion and do it together!

Mealprepped SALADS!? The key to crisp lettuce is COLD toppings- I purchased cooked chicken which was 👌 or you could cook it the night before. I always purchase romaine hearts and chop them myself- romaine is a pretty hardy lettuce. I hate boring salads so I added bacon and ranch- yep ranch.
