Two of my faves in one day! 🌮🐟#tacotuesday and its #nationalseafoodmonth so to celebrate both, I am making 🌮Cilantro Lime Cod Tacos with Avocado-Cilantro Lime Kale Slaw! This recipe is easy to do as you make the marinade, use half for the fish and then add in a couple more things to make your slaw dressing! First, thank you to @mscbluefish for making it easy to know I am purchasing wild, sustainable, and traceable seafood! You guys all we need to do is look for the #mscbluefish label, and we know we are helping to keep oceans healthy! So simple! The best part is, sustainable seafood is available at all prices. I picked up canned tuna with the label! Now to the tacos! 🌮🌮🌮 •Cilantro Lime Cod Tacos with Avocado-Cilantro Lime Kale Slaw• Start with #mscbluefish cod loins. Ingredients for the fish marinade, mix in a food processor, pour half of the mixture over fish, make sure covered well, let sit for 30 mins. Fry in oil in a pan until cooked. 1/2 cup (tight packed) fresh cilantro 1/2 cup avocado oil 1 tbsp honey juice from 1/2 lime 1 tsp chili powder 1/2 tsp each cumin, smoked paprika & chipotle 1- clove garlic With the other half of the marinade, we will make a dressing! Add to it the following and mix well in a food processor. 1/2 avocado 1 tbsp apple cider vinegar 4 tbsp almond milk Slaw 3 cups chopped kale, massaged with olive oil 2 cups shredded raw brusell sprouts 1 cup shredded purple cabbage pour dressing over and coat thoroughly. Assemble the fish and slaw in corn tortillas. Top with hot sauce cilantro and more line! ⚖️ Are independents or chain cafes better for vegan options in your area? ⚖️ ⁣⁣⁣ ⠀⠀⁣⁣⁣ This delicious mixed plate was from @mokokocoffee in Bristol ☕️ ⁣⁣ Would high recommend the vegan options for both the food and coffee here and if you want to check it out it was near the Harbourside by the shipping containers, opposite the healthfood shop. Feel free to DM me if you are heading down there and want some better directions 📨 ⁣⁣ ⠀⠀⁣⁣⁣ The system there is you pay for the plate by size, then you can fill it up as high as you want for a set price!⁣⁣⁣ ⠀⠀⁣⁣⁣ Hense why the food is almost sliding off my plate here 😂⁣⁣⁣ ⁣⁣⁣ I can’t remember the exact price but it was very reasonable for how much food you can cram on to the plate and that so much of the buffet bar was vegan friendly! ⁣⁣⁣ ⁣⁣⁣ When I lived in Bristol I would hardly ever go to chain cafes, and even the ones I thought of as chains were still localised mainly in the Bristol area (look at you BTP @bostonteapartyclifton and your fab brunches 👀). ⁣⁣⁣ ⁣⁣⁣ Then when I moved away from the city to a smaller town near by we almost always went to chains because at least there would be one vegan option on the menu. Whereas it was common to find ZERO options in the independents in this less populated area. ⁣⁣⁣ ⁣⁣⁣ Now even though I have moved again and live in a pretty rural area, I am fortunate enough to live near an amazing vegan café @okomokofarnham but the options for dinners in town are still lacking 🙅🏻‍♀️⁣⁣⁣ ⁣⁣⁣ Leaving me with the options of Zizzi and Bills for anytime I want to treat myself to a meal out. ⁣⁣⁣ ⁣⁣⁣ Don’t get me wrong I love these places and I usually have great experiences in the chains, but my heart does ache for the days when you’d walk along the road and be surprised if you saw a Costa or Starbucks rather than a cute little café with an unknown artists work hanging on the walls 😞⁣⁣⁣ ⁣⁣⁣ 🌟 How are the vegans options where you live? When talking about sustainability and food we have to include crickets. These edible insects are full of protein, iron, calcium and omegas. When roasted their taste is a cross between a nut and a tortilla chip. With little eco foot print and being easy to raise and harvest they are definitely a food source worth looking into. ***Tasty Tuesday Recipe***⁣ From @tabletocrave - tag #ntieats to be featured! ⁣ ⁣ Sometimes it's about throwing everything onto a plate a calling it good 👌⁣ •⁣ 🌿Mexican inspired bowls are a staple in our house! I usually have some frozen cooked sprouted lentils that I defrost in the morning to make a lentil-taco "ground meat" (it's just lentils, toasted walnuts and pumpkin seeds, and spices!).⁣ •⁣ The rest of the bowl is all about what I have in the fridge! I made a thing! The Wild Cacao project has been in the works since last summer, and I’m so proud to officially announce it is live. Whereas most cacao is grown in unsustainable monocultures, Wild Cacao is harvested in harmony with nature by communities along the Purus River in the state of Acre, Brazil. This cacao is used to make delicious craft chocolate bars by companies around the world, including @luisaabram, a female Brazilian chocolate maker who has a close relationship with the Purus community. I did the #uidesign and #uxdesign for this immersive storytelling site, which includes 360° videos, 360° photos, ambient audio, music, interactive maps, as well as gorgeous illustrations by genius Brazilian illustrator @justing.illus. I’ve been following Ju’s work for years, and I am so happy to have had the chance to finally work with her on a project! The soundtrack was provided by Gama, a Brazilian musician and dj whose music I simply adore (https://www.facebook.com/gamineaofficinalis). This project never would have happened without the vision and hard work of one of my best friends, @nancyzam01. She is a fantastic storyteller (and person) with a deep heart connection to the Amazon. I dont often talk about nutrition in this space, but that's about to chamge. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ There are a lot of people out there that would have you believe that they have the magic system that will get you those six pack abs in no time or that because a particular diet worked for them it will work for you. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I don't believe in a "system" or diet or any of that hoopla. What I do believe in is eating as close to nature as possible. To me that means free-range meats, and locally beyond organic grown veggies.
