I have a dream... American Dream. Obudziłam się na Manhattanie w Nowym Yorku z pięknym widokiem na miasto. Zrobiłam pyszne, delikatne pancakes z syropem klonowym, zaczęłam pakowanie walizek, a nie jest to takie proste (sporo do nich przybyło pamiątek i smacznych amerykańskich przekąsek). Nie mogło w nich zabraknąć mojego ulubionego syropu klonowego. Dzięki niemu w domu ponownie poczuję ten amerykański klimat. Gdy tylko znajomi dowiedzieli się, że lecę do Stanów miałam go na liście prezentów must have. Uff w końcu spakowałam się i wyszłam po kawę. Ostatnie chwile w Nowym Yorku spędziłam w Central Park, popijając pyszną kawę, zagryzając moimi pancakes, które zapakowałam do lunch box. Ten widok, który tam zobaczyłam zapiera dech w piersiach. Zamknęłam oczy ...na chwilę...na momencik... i wtedy... obudziłam się... Za każdym razem robiąc pancakes na śniadanie jestem myślami w moim Nowym Yorku...Może kiedyś uda mi się spełnić moje marzenia i polecieć do USA z @_parabole_ ...może już niedługo :)..Jak dobrze, że w @lidlpolska możemy kupić mój ukochany syrop klonowy. Овощной пирог с курицей и основой из цветной капусты Eng: veggies pie with cauliflower dough Ингредиенты: Половина 1 небольшого кочана цветной капусты 3 яйцо 4-5 столовых ложек муки 100 грамм шпината 4 куриных бедра без кожи и костей 1 крупная морковь 1 сладкий перец ½ стакана сливок 10% 100 грамм тертого сыра 4 зубчика чеснока Соль, перец по вкусу Приготовление: 1. Цветную капусту трем на мелкой терке, выкладываем в глубокую миску на полчаса. После перекладываем капусту в марлю и тщательно отжимаем всю лишнюю воду. После тертую капусту возвращаем обратно в миску, добавляем 1 яйцо, муку и соль по вкусу. Тесто тщательно перемешиваем и убираем в холодильник на полчаса. 2. В это время готовим начинку: курицу нарезаем кубиками и обжариваем на сковороде в течение 5-7 минут. 3. К курице добавляем кубики моркови и перца. Солим, перчим, пропускаем чеснок через чеснокодавилку. Обжариваем все вместе 10-12 минут, помешивая. Добавляем рубленный шпинат и через пару минут снимаем начинку с огня. 4. В отельной миске готовим заливку: смешиваем два яйца, сливки и сыр, перемешиваем. 5. В форму выкладываем пергамент и поверх него тесто. Руками делаем основу и бортики, чуть натыкаем вилкой и убираем в духовку, разогретую до 180С на 15 минут. 6. После достаем форму из духовки, выкладываем начинку и заливаем ее сырно-яичной смесью. 7. Cereal: the reality of tonight’s dinner. Instead of posting a pretty picture of what I could be eating tonight, this is the reality. There are days that I plan on making a nice, “healthy” dinner, but truth is, this does not always happen (far from always). And you know what? THAT’S OK! Did you know: if we eat three meals a day, we are eating 1,095 meals a year? This means that those 1, 2, or 3 meals that you may consider as “unhealthy” is microscopic in comparison to the bigger picture. Dinner tonight! Chinese Chicken Salad. I'm using up some rotisserie chicken from the freezer, along with some fresh veggies like cucumber, cabbage, romaine, bell pepper, and carrots. Fall is my favorite season, and although this time around things are a little too hard and my heart a little too broken, I am pushing to look outside of myself. Yesterday I went for a run and I made myself say ‘thank you’ a thousand times for all the reasons we take for granted everyday. I’m hoping to have that ready soon. In the meantime, here’s how my son and I made the spiders. . Spooky Spinach Spiders 🕷1 cup old fashioned rolled oats 🕷1/2 cup packed spinach 🕷1/4 cup no salt added organic creamy peanut butter 🕷2 tablespoons flaxseed meal 🕷3 tablespoons maple syrup 🕷2 large dates soaked in hot water for 5 minutes 🕷2 tablespoons of the liquid from the dates . Add oats to food processor and blend until it’s broken down. Add the spinach blend until it’s broken down. Add the flaxseed and pulse a couple times to mix it in. Add the peanut butter or any kind of nut or seed butter, the flaxseed meal, the maple syrup, soaked dates and the liquid from the dates. Pulse till comes together and forms a ball. Form into desired shape. I used a 1 1/2 tablespoon cookie scoop to scoop the mixture. I placed it on a baking sheet lined with unbleached parchment paper and flattened the top a little bit. For the legs, may use pretzel shaped pretzels or stick pretzels. I added Cauliflower Pretzels @fromthegroundupsnacks by cutting the curved parts of the pretzel shaped pretzels off with a knife or by breaking each stick in half and pushing it into the spider’s body. I added chocolate chips (@enjoylifefoods) as the eyes, but anything may be used for the eyes. Mine made about 11 spiders. SWEET POTATO NEST | 2 large red sweet potatoes, 1/4 cup arrowroot powder, 3-4 scallions, and sea salt. #spiralize your red sweet potato and toss in a plenty of arrowroot powder and chopped scallions. Shallow fry preferred cooking oil on med/med.-high. Once edges are golden flip nest and continue to cook until crispy. Flip a couple times to brown evenly. Adjust the flame down if potatoes brown too quickly. Drain on paper towel and immediately season with sea salt. Makes 3 nests...

This omelette is showing off its inner beauty 😉 Love this open-face omelette ❤️ So many ways you can fix this up but I always like to have a few basics in mine - tomatoes, onions, peppers, and mushrooms. See below for details. . Dice the following (or other veggies of choice) - zucchini, red onions, tomatoes, king oyster mushrooms. Cut off the root/bottom part of the enoki mushrooms (I used half a pack). Mince garlic (I used 4, but you can use less/more). Chop jalapeño. . Heat pan, add avo oil and garlic. Add the rest of your veggies except for the jalapeño (save tomatoes and enoki mushrooms for last) and cook. Season with garlic salt to taste. Remove from heat and save for later. Eggs - Whisk 2 Tbs of butter and 6-8 eggs (served 3-4). Season to taste with garlic salt. Heat pan and add 1 tsp butter; pour 1/3 (or 1/4) of eggs and cook on low-med heat, covered. Flip when the eggs are mostly firm and only a little runny on top. Remove from pan quickly. . Sprinkle shredded cheese of choice. Add veggies. Sprinkle a bit more shredded cheese and fresh ground pepper. Top with fresh jalapeño (optional) for a slight kick. NEW oh so delish recipe up on the blog today! Another use for my All Purpose Pulled Pork recipe I posted a while back. I made these BBQ Pulled Pork Naan Pizzas. My favorite naan bread (the roasted garlic variety obviously), three cheeses including fontina, smoky gouda, and tangy dollops of goat cheese. I used my bourbon peach BBQ sauce that I froze over the summer (but use YOUR fav sauce), and topped with fresh pickled red onion. SO MUCH YUM! Whole grain bagels, which I did some time ago. I made sandeiches with beetroot, rucola and zucchini. Have you ever made bagels? There are great! For sure I will do it again😊 Przepyszne bajgle od @kingaparuzel zrobiłam je pół na pół z mąką pełnoziarnistą i tortową. Są super na śniadanie lub do pracy, a najlepiej oczywiście smakują od razu z piekarnika z masełkiem. Patrząc pierwszy raz na przepis myślałam, że tylko się je piecze, bo nie doczytałam. Potem okazało się, że najpierw zaparza się je w wodzie z sodą, a dopiero potem lądują w piekarniku 😁 . Odkopuje zdjęcia 🙈 Ostatnio mam tak, że robię sesje, a potem nie mam kiedy przerobić zdjęć lub ich dodać.. Czasu trochę brak przychodzę z pracy i jestem zmęczona (jakoś mam mniej energii ostatnio), a w weekend nadrabiam to czego nie zdążyłam zrobić w tygodniu. Na szczęście zbliżają się 3 dni wolnego i tylko jak w sobotę upiekę ciasta na zamówienie, w niedzielę i poniedziałek będę focić 🤗 Najcięższej jest mi zabrać się do obróbki, czasami to odkładam dniami. This one is a personal favorite - maple zucchini on scrambled egg and toast. Slightly sweet and savory and totally filling all in one. . Scrambled eggs - Melt 1 Tbs of butter in frying pan, scramble 2 eggs (add another Tbs of butter as you’re scrambling the egg for the eggs to be fluffy and soft). Sprinkle of garlic salt to taste as you’re scrambling. . For the zucchini spirals, spiralize 1/4-1/3 of a small-medium zucchini. Lightly toss in avo oil and garlic salt (don’t overdo it on the garlic salt!). Cook over stove or in the oven or air fryer until zucchini is cooked and some of the edges just start to brown. . Put eggs over toast of choice (I used @daveskillerbread - one of my favorite breads). Layer with zucchini. When your hubs loves breakfast foods for all meals OTHER than breakfast, you prepare breakfast for the week’s meal prep! Because for breakfast, he still prefers store bought cereal 🤔🤷‍♀️ . Inspired by a @buzzfeedtasty recipe I saw a while back, these egg muffins are light and fluffy, full of color and flavor, and pretty filling! I usually pack 2-3 of these bad boys for my hubs with fruit, veggies and hummus, and a peanut butter sandwich as a snack. Makes meal prepping super easy and hubby’s tummy and tastebuds satisfied- it’s a win win! . For the eggs - whisk together 2 Tbs of melted butter (I use @earthbalance spread), 8 eggs, 1/4 cup of milk. Season to taste with garlic salt. It’s best if you do this in a measuring cup as it’ll be easier to pour into the muffin tin and save you on doing more dishes. Note- if you melt the butter in the microwave, make sure to melt it in short increments (10 secs at a time) to prevent overheating, so you don’t end up accidentally cooking part of your egg in hot melted butter when you try to whisk them together! The clumps won’t be pretty or tasty. . Preheat oven to 350 deg. Spray muffin tin with nonstick spray. For this variation I layered the bottom of the pan with spinach and added in other toppings - tomatoes, red onions, king oyster mushrooms, zucchini, sweet corn kernels, and my favorite breakfast sausage, @aidellssausage (bacon, mushroom and cheese flavor 🤤). . Pour in the egg mixture over your toppings evenly throughout the pan; sprinkle with fresh ground pepper. Bake for about 15 min at 350 deg. Let cool in pan for about 10 min. Let cool on baking pan before packing it away. . Sometimes...ok well most of time I eat breakfast at home, so I like to get creative! I took a slice of bread pressed the middle down put a circle layer of prosciutto on bread, cracked an egg in the middle, sprinkled white cheddar cheese, dashed it with pepper • no salt, prosciutto is salty! Baked it at 400° 11 minutes. Depends on your oven *375 degrees...in some cases.
