Are you a seafood fan? 🐟⁠ .⁠ If so, you're going to love these Simple Norwegian Fish Cakes... they're two things I love: Easy + Delicious!! 🙌⁠ These fish cakes were inspired by my recent trip to Norway with @norwayseafoodus (sponsored travel) and from meeting the incredible @northwildkitchen.⁠ .⁠ Since October is National Seafood Month, they're also a tasty way to get in your 2-3 servings of seafood a month for optimal health. ⁠ .⁠ Here's how to make them (recipe link in bio):⁠ ⁠.⁠ 12.5 ounces fresh Norwegian cod, pollock, or haddock, without bones or skin (must be fresh!)⁠ 1 1/4 cup whole milk or oat milk⁠ 3/4 teaspoon sea salt⁠ 1/2 teaspoon ground nutmeg⁠ 1/2 teaspoon ground black pepper⁠ 2 tablespoons potato starch⁠ 3 tablespoons extra-virgin olive oil, for frying⁠ ⁠ Add the fish to the bowl of a food processor or blender. With the processor or motor running, slowly stream in the milk, followed by the salt, spices, and starch. Process 2 to 3 minutes until a very smooth and a thick mixture is achieved. Dip a large spoon in warm water and scoop out large spoonfuls of the fish mixture into 12 equal round discs and flatten slightly. Heat a large non-stick fry pan over medium-high heat. Fry 4 fish cakes at a time with 1 tablespoon of olive oil for each batch. Cook for about 4 minutes per side, and until golden brown on both sides. When fully cooked through, the fish cakes should be firm to the touch in the center. The pumpkin madness continues! 🎃 Today with this super cute Pumpkin Pie that I made using @sallysbakeblog’s all butter pie crust recipe & my own filling recipe! 🥧 The initial plan was to make the pie top a Jack Skellington face but it fell apart as I transferred it because it had already gotten warm 🤷🏽‍♀️ Anyways, here’s the recipe for the filling👇🏼 Part 1: Sweet Pumpkin Puree Ingredients: 1/2 cup Butter 1 1/2 cups brown sugar (I used light) 2 1/2 TBSP Ground Cinnamon 1/4 tsp ground cloves 1 tsp vanilla extract 1/2 cup water 3KG peeled pumpkin cubes Directions: 1. In a large pot, heat brown sugar on medium heat until completely melted (stirring constantly) 3. Add Butter and stir until melted 4. Add Cinnamon, cloves, vanilla extract and stir well 5. Add water and stir 6. Add Pumpkin, cover & bring to low heat until it starts releasing its liquids 7. While still covered, bring to medium heat 8. When the pumpkin has completely shrunk in size & all liquids are released, remove lid and stir until very little liquid is left (some chunks will still be left, that’s okay) 9. Turn off the heat and let it cool Part 2: Pumpkin Pie Filling 1 1/2 cup sweet pumpkin puree 2 eggs 2 tsp cornstarch 1/4 cup milk dash of salt Directions: Whisk everything together and pour into your semi baked pie before adding the top layer and putting it into the oven. #followthenaguibs

Pumpkin Cinnamon Raisin Babka! Pumpkin babka bread, with a yummy Cinnamon Raisin Filling. I was so pleased with how this babka turned out (I finally got the stripes more how I want them!), and plan to make this bread each fall. ⁣ ⁣ Pumpkin Cinnamon Raisin Babka⁣ ⁣ 1/2 cup pumpkin⁣ 1/2 cup milk⁣ 3 tablespoons butter, melted⁣ 1 egg⁣ 1/4 cup brown sugar⁣ 1/2 teaspoon salt⁣ 2 teaspoons instant yeast⁣ 3-ish cups flour ⁣ Raisin Filling⁣ 1 cup raisins⁣ 1 cup golden raisins⁣ 1 cup dried cranberries⁣ 1/4 cup water⁣ 4 tablespoons butter⁣ 2 teaspoons vanilla extract⁣ 1 tablespoon cinnamon⁣ 3/4 cup sugar⁣ 1/2 teaspoon salt⁣ ⁣ In a large bowl, add milk, pumpkin, and melted butter. Whisk together thoroughly. Add in egg and whisk well. Add brown sugar and salt and mix well. Add instant yeast, and mix well. Stir in flour and mix well. Knead until dough starts to come together, and let it rest under a damp towel for 10 to 15 minutes. After this time, knead the dough until it becomes smooth and elastic. The dough should be tacky but not sticky. Let dough rise for for an hour to 2 hours, or until doubled in size. ⁣ ⁣ Meanwhile, make your Raisin Filling. Add all dried fruits and water to bowl. Cover and microwave on high for one minute. Add butter, cinnamon, vanilla, sugar and salt and stir into warm raisin mixture. Once butter has melted, food process the raisin mixture for about 30 seconds to form a spreadable paste. Reserve 1/4 cup of mixture and set aside. ⁣ Divide dough in half, and roll each piece of dough to a 12 by 24 inch rectangle. Spread with half of the raisin filling. Top with other rectangle of dough. Top this with the remaining half of raisin filling. Roll the long edge of the dough tightly so you have one 24 inch long roll. Cut in half so you have two 12 inch rolls. Take half of the reserved 1/4 cup of the raisin filling and smear over the top of one of the rolls. Take the other roll and place it over the first in an X shape. Twist each end around each other, so you have a striped twist of dough. Lay twisted dough in pan. (Directions continued in comments)...

Rainy Day Soup 🌧️🍲 Author: @bellacibo Pasta and Potatoes soup is a typical dish that comes from my parents hometown Naples. I was born in Naples but I grew up in North Italy. My mom used to make this dish a lot especially when it was rainy and cold outside! When I moved to Vancouver I started to cook by myself for my husband trying to offer him all the amazing dishes that my mom taught me. The weather was rainy every day so for a week, every day, we had Pasta and Potatoes soup. At the 6th day my husband asked me ” Can you please tell me why you make this soup everyday? It’s very delicious BUT every day? ” Well, I replied, my mom used to make this dish when it was raining so I would love to keep the same tradition”. Now my husband tells this story to everybody, to all my friends. . Ingredients for 4 people👇: ▪️200 grams of pasta small cut like ditalini, small shells or broken spaghetti ▪️500 grams potatoes cut in small pieces ▪️50 grams pancetta or bacon ( if you don’t like it it’s ok) Soffritto( carrots, onion and celery chopped fine) ▪️1 tomato cut in pieces ▪️1 bouillon ▪️5 tablespoons of oil ▪️Parmesan Crust ( if you don’t have it it’s ok) ▪️Salt ▪️Pepper ▪️Parmesan cheese ▪️A sprinkle of love . Method👇: ▪️Cut the celery, onion and carrot in small pieces. ▪️Put them in a pan whit some oil and let them stir fry for few minutes. ▪️Cut the potatoes in cubes, not too small, and add them to the vegetables. ▪️Stir fry everything for a minute, now you can water! The water has to cover all the vegetables. ▪️Add the tomato and a bouillon. ▪️Cook everything on a medium high heat and when it does start to boil lower the temperature down on a low heat and cover with a lid. The potatoes have to cook slowly for 30 minutes or more. Sometimes gently stir the potatoes. ▪️After that you can add the pasta and the Parmesan Crust, if you need you can add another glass of water and cook everything in low medium without lid! AD: Sweet Hot Crispy Chicken 🔥 I’m a huge fan of crispy #friedchicken. I remember my mom shaking large paper bags full of seasoned flour like her mom used to, smelling the aroma of frying oil and digging my teeth into that crispy skin and juicy meat. It wasn’t until a few years ago I found out the secret was using Argo® Corn Starch with the flour. There are many uses for Argo® Corn Starch, like using it as a thickening agent for sauces & gravies, but adding it to your batter turns mediocre chicken into the crispiest chicken ever.🍗 This recipe was a huge hit with the family! The chicken is juicy & tender on the inside and is crispy on the outside, making it a perfect bite. Drizzling with the Sweet Hot Sauce really took it over the top, too. If you’re not a fan of fried chicken, you can also bake this in a high-temp oven or use an air fryer, and the addition of Argo® Corn Starch will help make it the #crispiestchicken ever. #crispycreations #collectivebias. . Chicken: 3 pounds chicken tenders 2 cups buttermilk 1/2 hot sauce Oil for frying 2 cups flour 3/4 cup Argo® Corn Starch 1 tablespoon each: paprika, chili & garlic powder 1.5 tsp kosher salt 1.5 tsp black pepper . Instructions: Place chicken in a large bowl. Pour the buttermilk & hot sauce over the chicken. Stir to coat and refrigerate at least 4 hours or overnight. In a large pot for frying, add enough oil to be at least 2-2.5 inches deep and heat until 350F. In a large bowl, mix together the remaining chicken ingredients; set aside. When oil is hot, take each piece of chicken & coat it well in the flour mixture. Fry 3-4 pieces at a time for 5-7 minutes until golden brown or until the internal temp is 165F. Best part of making a big batch of Turkey Bolognese?! Having the base for this super easy Turkey Veggie Chili! This week has been really busy so this was a huge help. Just sauteed some carrots, cauliflower, peppers, cherry tomatoes, spinach and onions in a pan, added the rest of the Turkey Bolognese, heated it all up and then topped it with hummus and a crispy over easy egg. Another regional specialty from our trip South- This time ‘Black plum vlaai’. ⠀ ⠀ .⠀ ⠀ ⠀ Vlaai is similar to pie- but the folks in Limburg will tell you it is NOT pie. The crust is a yeasted dough and when I’m there I always try one I haven’t tried before. This time- The black plum vlaai & on another day- Victoria vlaai- which is just as sophisticated as it sounds- And includes apples, pineapple, raisins (which according to my diddy *dad* makes everything better), plus custard and candied almond slivers, but I digress. ⠀ ⠀ ⠀ .⠀ ⠀ ⠀ Back to the black plum vlaai. I wasn’t sure I would like it. In a medium bowl, whisk together ketchup, chicken broth, balsamic vinegar, honey, brown sugar, garlic, salt, and pepper. Pour over chicken in crockpot. Put the lid on and cook on low for 4 hours, or high for 2 hours. Whisk together corn starch and water. Gradually stir into sauce until sauce reaches desired thickness. My mom and I just signed up for a Norwegian cooking class and I am SO EXCITED. I heard a rumor that we’re going to make lefse, which is pretty much what I want to be doing 80% of the time 😛🌲🦔🍄🍁 If you’ve never had lefse, it’s essentially a tortilla made out of potatoes that you eat with butter, sugar, jam, meatballs, etc. and it’s sooo damn good. Missing Sperlonga today, so I decided to make nonna's pasta with fresh tomato sauce. I learned a few things from
nonna to make the best pasta al pomodoro: 
1) Use cherry tomatoes, and not any other kind of tomato. You'll get the best and sweetest sauce this way! 2) Use high quality durum wheat semolina pasta (like the pasta from @westernfamilyca brand)
The @westernfamilyca pasta is made in Italy, and these penne rigate hold the cherry tomato sauce
beautifully 😀 
I came pretty close matching nonna's pasta al pomodoro, and it brought me straight back to Italy. Now if only I could figure out a way to transport myself there for real 🤔

Wild mushrooms with zucchini and pumpkin 🎃🍄 Sooo, wir waren ja diesen Herbst bisher einige Male Pilze sammeln und die Ausbeute war jedes Mal echt gut und immer ein bisschen anders. Wir haben Braunkappen, Rotkappem, weitere Maronen, Steinpilze, Rotfußröhrlinge, Birkenpilze, Krause Glucke und Hallimasch gefunden. Wobei letztere nur Füllpilze sind. Frische Pilze schmecken einfach sooo gut! 🎃 👉🏼Ein weiteres Rezept der vielen Pilzpfannen dieses Jahr😅 Den Reis nach Packungsanweisung kochen (ich finde Reis zu Pilzen echt am besten. Der ist neutral und leicht) 🍄 Die Pilze scharf mit Knoblauch und etwas Zwiebel anbraten. Die können ruhig ein paar Minuten auf höchster Stufe aushalten, damit eventuelle Parasiten wie Fuchsbandwum, abgetötet werden. Salzen und leicht pfeffern. Dann die Platte auf 4/5 runterstellen und mind. 15 Minuten garen. Am Ende noch für ein paar Minuten den Deckel drauf. Ich gieße gern mit Reiscreme auf und würze nochmal nach. 🍄 Die in dicke Streifen geschnittene Zucchini koche ich immer nur wenige Minuten in Salzwasser. Etwa 7 Minuten auf Stufe 3. Dann Olivenöl drauf und fertig! 🎃 Den Butternut-Kürbis habe ich etwa 15 Minuten bei 200°C/Umluft im Ofen in einer Auflaufform gebacken. In etwa 3mm dicke Scheiben schneiden, Rapsöl drüber, Salz, etwas Pfeffer – das war es! Manchmal ist weniger mehr. 🌿 Frischen Koriander und Oregano darüber geben und schmecken lassen. 🎃🍄 Guten Appetit!😋✌🏼 #mushrooms🍄 #mushroom

'Tis the season for everything pumpkin, for soothing comfort food, and warm sweaters. Today is the perfect day for this roasted Pumpkin and Sweet Potato Soup with leek and ginger! Velvety smooth, nutritious and delicious 😍 . . #recipe You can prepare this soup with either already roasted pumpkin and sweet potato or with raw. The same method is used for both but cooking time is different. Ingredients 2 tablespoons olive oil 1 medium onion, finely chopped 1 small leek, finely chopped white part only  1 small1 pound pumpkin, or Butternut Squash 1 large sweet potato, peeled and cut into 2 cm cubes (about 3/4 pound) 2 cups or more water or vegetable stock. Ginger, salt and  cayenne to taste Instructions ***Roasting the pumpkin 1.) Cut off top of pumpkin 2.) Cut pumpkin in half 3.) Scoop out seeds & pulp – save seeds for roasting if you’d like! 4.) Cut 2 pumpkin halves in half again, and continue until you have 8-16 small pieces  5.)Place pumpkin pieces face up or down on baking sheet.  No oil needed. 6.) Roast in oven on 375° for 45 min or until lightly browned. 7.)Remove pumpkin from oven and let cool so it’s comfortable to touch. 8.) Peel skin off, being careful not to waste any of the precious pumpkin! -Roast sweet potato cubes till tender -Heat olive oil in a large pot over medium heat. - Cook the onion and leek for 3 minutes, or until soft. -Add the roasted pumpkin and sweet potato, and water or stock of choice. - Cover and bring to a boil. - Reduce the heat and simmer for 5 min. Pürierte Möhrensuppe mit Ingwer 🥕🥔🌱🥕🥔🌱🥕🥔🌱🥕🥔 Mit dieser Suppe lässt sich auch eine Darmentzündung ganz gut aushalten. Es ist nicht zu viel Ingwer drin, damit sie nicht zu scharf wird, und sie ist leicht verdaulich, weil püriert. Insofern also immer gut für #reizdarm und #reizmagen. Der Reis gibt zumindest ein wenig das Gefühl von festem Essen. Heute ist für mich Tag 10 mit Suppe und Brei und kein wirkliches Ende in Sicht. Vielleicht geht morgen mal wieder gedünstetes Gemüse. 🥕 👉🏼Zutaten für einen Suppentopf Etwa 10 normalgroße Möhren 3 kleine Kartoffeln 1 mittelgroße Zucchini 1 rote Paprika 1/2 orange Paprika 1 dickes Stück Ingwer, etwa 2cm lang 1/2 Tomate Ein guter Schuss passierte Tomaten 1 EL Tomatenmark 1 Zwiebel 2-3 Knoblauchzehen 1/2 Dose Mais Gewürze 🥔 👉🏼Zubereitung Zwiebeln, Knoblauch und Ingwer klein schneiden und in den Topf geben. Gleich auch das klein geschnittene Gemüse dazu, einen guten Schuss Rapsöl darüber geben und erstmal kurz bei höchster Hitze schmoren. Nach etwa 1 Minute Platte auf 5/6 stellen, Gemüse mischen und würzen: Salz, Pfeffer, gemahlener Koriander, Cumin, ein knapper TL Café de Paris, viel Kurkuma (ich habe gemahlenes genommen, zusätzlich kann natürlich auch frisches rein). Etwa 5 Minuten schmoren lassen und gelgentlich umrühren. Währenddessen die tomatigen Zutaten dazugeben. Dann mit Wasser auffüllen, so dass das Gemüse bedeckt ist und den Herd wieder ganz heiß stellen. Wenn die Suppe kocht auf 3 stellen und 15 bis 20 Minuten köcheln lassen. Am Ende mit dem Pürierstab pürieren und erst dann habe ich den Mais dazu gegeben. Bei Bedarf nachwürzen. 🌱 Wer Basmatireis als Beilage möchte muss diesen natürlich zwischendurch kochen. 🥕 Garniert habe ich das Ganze mit Mungobohnenkeimlingen, frischer Ruccola, Basikilum und Koriander. Alles Eigenzucht und -anbau. 🥔 Guten Appetit!😋✌🏼
