This Granola tastes just like Nutella...but for real, it seriously does! Maple glazed tofu + brussel sprouts ✌️ . . . I’ve seen no less than 3 posts on brussel sprouts today, so obviously I had to 😏 This was so delicious (I’m actually still dreaming about this days later) and insanely easy to make. Slice clean brussel sprouts lengthwise in half, and sauté in ~1 Tbsp olive oil over medium high heat until nice + golden brown (about 10-12 minutes). If using already prepared tofu, add cubed pieces along with maple syrup (2-3 Tbsp) to pan and cook over low- medium heat for about 5 minutes. Add salt + pepper to taste during this time. I also love adding a pinch of chili flakes! So good, so simple and would make a fun + quirky side dish to your 🦃 day celebrations! Wanting a light way to finish off a heavy Holiday meal? Try these gorgeous pastries with Poached Pears playing the leading role : : : Poached Pear Puff Pastry Tarts with Pistachios (Recipe inspired by @williamssonoma ) : : : 3 firm but ripe pears 3 cups red wine 3/4 cup granulated sugar 2-inch strip of lemon zest Juice of 1 lemon 1 star anise pod 1 cinnamon stick 1 tsp. ground cinnamon 2 sheet frozen puff pastry 1 egg, beaten Course sugar for sprinkling 1/2 cup chopped pistachios * Peel the pears, leaving the stems intact. Cut each in half lengthwise and, using a melon baller, remove the core from each pear half. In a small saucepan over medium heat, combine the wine, sugar, lemon zest and juice, star anise, cinnamon stick and ground cinnamon. Bring to a boil, stirring occasionally to dissolve the sugar. Add the pears, reduce to a gentle simmer and cook, turning the pears occasionally, until very tender, about 1 hour. Remove from the heat and let cool to room temp. (For a deeper color and flavor, once the pears have cooled, cover and refrigerate in the poaching liquid for up to 2 days) Preheat oven to 375F. Line a baking sheet with parchment paper. Roll out each puff pastry sheet. Using a 5-inch round cutter, or a bowl, cut out 3 rounds from each sheet. Transfer the rounds to the prepared baking sheet. Using a sharp knife, slice the pears vertically, stopping 1/2 inch from the stem end so the pear slices stay attached. Fan out each pear on each of the pastry rounds, gently pressing on the pear half to fan the slices but leaving the slices overlapping. Brush the edges of the pastry with the beaten egg and sprinkle with coarse sugar. Bake until the puff pastry is crisp and golden, about 25 minutes. I’m currently a tornado of a person, trying to check off the millions of things I need to do before flying out to Portland for Thanksgiving 🌪 one of them was to share a Thanksgiving (more like day after) recipe, but I just didn’t quite get there... However, I’m sharing my favorite recipe for Brussel Sprouts I developed last year! They are insanely crispy from the oven because of a great little trick, read about it! If you need an easy last minute idea for a Thanksgiving Appetizer, look no further — SPICY GARLIC SHRIMP is here to save the day!🦐🌶 🍤 ⠀ ⠀ First, you need to make Garlic Confit:⠀ • Just put a bunch of peeled garlic cloves in a small pot, pour enough olive oil over them to just cover them, add a chili pepper or two for a bit of heat (optional), then place it on a burner on the lowest heat possible and let it cook super slowly until the garlic cloves are soft and just turning to brown. Pancakes come in many forms. Today’s version is perfect for this time of year; Savory Pumpkin, Rosemary, Cheddar, which can be for breakfast lunch or dinner. Make a batch and freeze them and pop them in the toaster when the mood hits you👌 : : : : Pumpkin Rosemary Cheddar Pancakes with Cauliflower Gnocchi, Eggs, Avocado and Garlic Spinach : : : 2 tablespoons olive oil 1 small onion chopped 2 large cloves garlic chopped 2 teaspoons minced fresh rosemary ½ cup all-purpose flour ⅓ teaspoon salt ¼ teaspoon baking powder ⅛ teaspoon baking soda ⅛ teaspoon black pepper 1 large egg ¼ cup pumpkin puree 1 tablespoon honey 1 tablespoon apple cider vinegar 3 tablespoons milk 1/2 cup shredded Cheddar * Heat the olive oil in a medium skillet over medium heat; add the onion and garlic and cook for about 5 minutes or until softened. Add rosemary, and cook 1 minute more. Remove from heat. Whisk together the flour, salt, baking powder, baking soda, and black pepper in a medium bowl. Add the egg, pumpkin, honey, vinegar, milk, and onion mixture, and stir to combine, being careful not to over-mix. Fold in the cheddar. Heat a large nonstick skillet over medium heat. Once the pan is hot, add a light coating of canola oil and swirl the pan to coat. Drop the batter into the hot skillet (approx 1/4 cup) and slightly spread it out to a circle.
