🌱 74.2g very high protein 45 minute potato & vegan sausage. Not quite 30 minutes but really easy to do! Roast potato, vegan sausage with vegan gravy. ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe:⠀⠀ 1. 🥔 Stab potatoes a few times, lay on foiled pan, cover in olive oil and S&P. Place in the center of a preheated oven at 180C, leave and time for 40 minutes - 5 mins⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. 🔪 Wash peppers, then dice up all the veges. Peppers, onion, garlic, chives, mushrooms into small chunks and set aside - 10 mins⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. 🔥Heat up your pan & add oil. Start frying the mushrooms first for 2 minutes. Add in the peppers, fry for another 1 min. Add in onions, garlic & chives, fry another minute. Add in some water just enough to half cover the veges, then add in the vegan gravy mix. Let it stew until gravy is thick as you want - 7 mins⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. 🔥 Add a bit of oil to a hot pan, add Tofurky and fry on medium heat for 2 minutes, remembering to move it - 2 mins⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5. 🍽️Start washing up and wait for the potatoes to be roast in remaining 16 minutes - 16 mins⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Total time ~ 45 minutes⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🌱Protein mainly comes from Tofurky⠀ 🌿 Tofurky 1 sausage = 18.3g protein (3 here)⁣⁣⁣⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✍️📖 What’s Tofurky? • easy like Sunday morning • and realising that it's not the days you have to manage but the moments - I've got into a good routine here of starting my weekend mornings with a yoga session at @theconsciousclub and planning the day from there - usually involving a long coffee or freshly brewed @teapigs/@pukkaherbs (both #plasticfree teabags) cup of tea ☕ 🌿 I'm planning less and seeing where the day takes me - yesterday that was a trip to the market followed by sunset drinks at @pllek_amsterdam (a cool beachy kinda of vibe in northern Amsterdam) and today a long walk to the park followed by an impromptu wine tasting. sitting in the sun with a coffee was literally so perfect and really made me think of how I do my weekends in London 🌿 I plan a lot because I worry that I'm not making the most of my free time. I plan because I want to make sure I see everyone I want to see. I plan so I fit in my exercise and food prep. and now I'm wondering how I take the elements of my life here that I've loved so much and transition them back to London. I'm intrigued as to what everyone else does - is London overwhelming or am I overcomplicating things? how often do you just see where the day takes you? ✨ #sundaymeditation

The Little Food Critic tried a runner bean (she’s usually suspicious of anything green apart from broccoli). Perhaps something to do with the fact we told her if she wants to be a superhero (namely Owlette) when she grows up, she needs to start trying new food. It's vegan restaurant week in Baltimore (perfectly timed for Valentine's Day) so my boyfriend and I tried to hit a few different places we hadn't been before. . & guys, I'm telling you... this week, I've had some of the best vegan food of my life 😍 . The first up is the Monster Mac Burger from @goldenwestcafe in Hampden. It was @theimpossibleburger topped with smokey mac n cheese and a vegan hot dog. Hands down one if the best burgers I've had, vegan or not 🍔 . Second up is the vegan chocolates from @charmschoolchoc in Hunt Valley 🍫 They take chocolate to a whole new level, introducing me to the first vegan milk chocolate and white chocolate I've ever tasted. (And it did not disappoint) not to mention their dozens of other amazing chocolate treats (think: multiflavored bon-bons, chocolate covered nuts, white hot chocolate, etc). I was tempted to buy one of everything but knowing they're right down the road I decided to pace myself and start with these 3 😅🙈 . Third was a vegan glazed coconut donut & macadamia nut milk Chai latte from @ventcoffeeroasters in Hampden. The Chai latte was good but oh. my goodness. that donut 🍩💕 I wish I could try it again for the first time because it was so delicious 😋😍 . Day 1 of #plantpoweredt1d: WHY PLANTBASED? 🍌🥬🥝🍏🍒🥭🍇🍓🥦🥕🍋🍊🍐🍎🍉🍠🌽 There’s SO much I could say to answer this😅🙏🏽🌻 • • • I went vegan a little over two years ago mainly for the animals and the environment BUT this was after so long of wanting to be vegan and not making the change because I thought that my diabetes management would suffer. I listened to what I’d been told regarding the best way for type 1s to eat, to what I’d been told about how bad carbohydrates, especially fruit, are for blood sugar levels and how much easier it is to manage by eating a diet higher in animal proteins and fats. It wasn’t until I learnt about all the amazing health benefits of a plantbased diet that I was finally able to make the switch without stressing about how it would affect my blood sugar levels. And I wish I’d made that switch sooner, because if it weren’t for the amazing and varied plant foods that I eat every day, I know for sure that I would not feel as good as I do now. I would not feel as energized. And knowing that this is not only the best thing I can do for my body but also for other living beings and for the planet makes eating a plant based diet the easiest decision I’ve ever made. 🌱 #type1diabetes {swipe until the end to see the challenge ! }

I spent last week in Lanzarote and finding @the.v.factor was definitely the highlight! ▫️ @veganglen__ and I hired a pedal car (no idea what it’s called just swipe and look 😂) and cycled 6 miles there and 6 back! A definite recommended book ✨ •• •• “Your beliefs about yourself arise as a result of prior causes & conditions”. Therefore, don’t take them too seriously or personally; the thoughts you have right now often have very little to do with the present moment or who you are in this moment but instead arise out of the tendency to hold onto the past. •• •• “Thoughts are just movements of the mind that is thinking them.” Thoughts are not fixed realities, see them for their ephemeral, fleeting nature and recognize that the mind is a content creator. You have the power of tapping into the vast potentiality & the vast array of possibilities when learning to direct your attention & thought elsewhere. The trick is to do this all without being rigid & controlling. A delicate dance between just allowing what is there to be there, allowing it to arise without rejecting/avoiding or shunning ANd gently coaxing thoughts into a more positively positioned channels. The key to this balance? The key is mindfulness. The more awareness we shine on the mind, the more spacious it becomes. 🌱

Tofu Parm is happening 😍 Made it the same way as my tempeh parm and it’s just as good. A whole lot of steamed broccoli & Trader Joe’s cauliflower gnocchi on the side since it’s been awhile since I’ve made it! To be honest, I couldn’t finish all of this 😂 so I will be saving the remaining for leftovers. Having the chillest Sunday ever and it feels so good. BBQ Jackfruit is one of my all time favorite vegan meals. This is probably because I'm obsessed with BBQ sauce... seriously, I'll eat it with just about anything! If you deal with low iron levels~this is for you! 1 hand full of spinach, 1 lemon, 1 lime, 1 banana, 1 tbsp of chia seeds and @kulikulifoods Moringa powder. I also had a spoonful of blackstrap molasses for an extra boost of iron. When consuming high iron foods you want to also eat something high in vitamin c to help with absorption🍋🍊(top is plain @chobani yogurt) which I’m loving lately!!

🥘 Vegan paella in the Bronx! 🥘 For a while now, I’ve been seeing the Paella Valenciana pop up as a vegan dish to try at @bronxhavanacafe! Truthfully, I didn’t get it sooner because this dish cost $22 which is 👀 a lot 👀 but I figured the amount and ingredients probably would justify themselves. Anyway, fast forward to today where I’m surprised with this dish (thank you @sheri.baker_ 💖)! This is a vegan take on the classic paella and features saffron rice, sliced vegan sausage, roasted Spanish peppers, zucchini, squash, fresh peas, string beans, and carrots all topped with a drizzle of extra virgin olive oil. This picture does not do justice for the massive amount in the container. Probably the largest serving of rice I’ve EVER received. The vegan sausage also has a really yummy flavor (I’m curious which brand they use!) and went perfectly with the flavorful composition of this dish. I can see this being a really great meal to split with friends (like at least 2-3 y’all it’s a lot 😂)! In general, I’m happy to see a another vegan dish make its way into a non-vegan restaurant in the Bronx. Go try the Paella Valenciana at @bronxhavanacafe (which recently was awarded the Bid Gourmand designation in the 2019 @michelinguide! Congrats! 🎉) and let me know what ya’ll think! If you’ve tried it already, what are your thoughts? Delicious DAL TADKA🍛😋⁣⁣⁣ Sometimes the most humble looking recipes are the most delicious! ⁣Even though this is the most common dish in my Indian cuisine, it enjoys an iconic place due to its distinct taste and aroma.⁣⁣⁣ Ease your soul with food like dal tadka and chapati which are packed with all the goodness of protein rich lentils.🍛😋⁣⁣⁣ ⁣⁣⁣ Recipe below 👇🏻⁣⁣⁣ ⁣⁣⁣ INGREDIENTS:⁣⁣⁣ For the dal:⁣⁣⁣ 🔹1 cup toor dal⁣⁣⁣ 🔹½ inch ginger, crushed⁣⁣⁣ 🔹1 onion, finely chopped⁣⁣⁣ 🔹1 to mato, finely chopped⁣⁣⁣ 🔹2 tsp garlic, crushed⁣⁣⁣ 🔹1 tsp turmeric powder⁣⁣⁣ 🔹1 tsp red chilli powder⁣⁣⁣ 🔹cilantro , chopped⁣⁣⁣ 🔹1 tsp coriander powder⁣⁣⁣ 🔹salt to taste⁣⁣⁣ ⁣⁣⁣ For tempering:⁣⁣⁣ 🔸2 tsp oil ⁣⁣⁣ 🔸1 tsp mustard seeds⁣⁣⁣ 🔸1 tsp cumin seeds⁣⁣⁣ 🔸3 red chilies, dried⁣⁣⁣ 🔸pinch of asafoetida⁣⁣⁣ 🔸½ tsp red chilli powder⁣⁣⁣ 🔸½ tsp garam masala powder⁣⁣⁣ 🔸few curry leaves⁣⁣⁣ ⁣⁣⁣ INSTRUCTIONS:⁣⁣⁣ For dal tadka:⁣⁣⁣ 1. Pressure cook 1 cup of toor dal with 4 cups of water for 20 mins.⁣⁣⁣ 2. Heat oil in a non-stick pan and saute onions till they turn golden brown.⁣⁣⁣ 3. Add crushed garlic , ginger, chopped tomatoes ,red chilli powder , turmeric and coriander powder and fry without burning the spices.⁣⁣⁣ 4. Now add in cooked daal and mix well ⁣⁣⁣ 5. Add salt to taste.⁣⁣⁣ 6. Adjust the consistency by adding required water.⁣⁣⁣ 7.
