Donโ€™t you just wanna sink your teeth into one of these Brownie bite PB sandwich cookies ๐ŸคŸ๐Ÿฝ? Iโ€™m taking all the shortcuts I can get this week, with sick and teething kiddies. From @panaceas_pantry - These cookies took 5 mins to prepare, and even less time to eat. Youโ€™ll need 2 x @ceresorganics brownie bites 2 Tbsp water 1/3 cup coconut oil 1/3 cup maple syrup 2 tsp vanilla Peanut butter Method 1. Preheat oven to 180 degrees C, and line a cookie tray. 2. Melt coconut oil then add to a bowl with remaining ingredients, except the PB. 3. Using wet hands, roll into desired balls (I did mine at 40g), then place on baking tray and squish down with a fork. Bake cookies for 12 mins. Cool completely before smooshing together with your most fav peanut butter! White asparagus & pumpkin cream soup with shiitake bacon by ๐Ÿงก . (Makes 2 servings) . Ingredients for the soup: 500g/1lb white asparagus 2 yellow onions 2 garlic cloves 2 mini white pumpkins 1-2 tbsp vegan butter (or olive oil) 2 tsp vegetable broth paste 160mL full fat coconut milk or cream 160mL water 1 tsp dried (or fresh) rosemary Sea salt to taste Ingredients for the shiitake bacon: 2 cups of shiitake mushrooms 1-2 tbsp olive oil 1 tsp liquid smoke (or smoked salt) 1/4 tsp paprika or smoked paprika 1 pinch sea salt Toppings: Freshly ground pepper Olive oil drizzle INSTRUCTIONS 1.Preheat the oven to 400F/200C 2.De-stem and slice the mushrooms thinly. Add them to a bowl and mix them with the oil, liquid smoke and seasonings until every mushroom is well coated. Place them on a baking tray lined with parchment paper and bake them for approximately 25-30 minutes (check after 15-20 minutes, they should be crispy but not burned) 3.While the shiitake bacon is baking, chop or dice the onions, mince the garlic and start sautรฉing both in a pot with the vegan butter (or oil) over medium heat (set a timer for 25 minutes) 4.Wash the pumpkins and remove the seeds, then chop or dice them (no need to peel). Add the pumpkin to the pot about 5 minutes after the onions and mix well. 5.Peel the asparagus (just the first outer layer) and chop, then add to the pot 10 minutes into cooking. 6.Next, add the coconut milk or cream, the water, vegetable broth paste and rosemary. Lower the heat to low-medium and let simmer for 15 more minutes, making sure you stir well. 7.After 25 minutes total, remove from heat and blend the soup using an immersion stick blender or a regular blender (just be careful โ€“ the soup will be very hot). Taste test and add a pinch of salt if necessary. 8.Serve in a bowl with the shiitake bacon, an olive oil drizzle and freshly ground pepper and enjoy! Other serving suggestion: serve with a slice of toasted whole wheat bread with vegan butter. . . . ๐Ÿ˜† repost @bestofvegan ๐Ÿฆ‚

made this Creamy spinach pasta.๐Ÿ˜ Tag someone who likes dinner to be done QUICK! Ingredients: 1 box pasta (I used ) 1/2 Can white besns (I used great northern beans) 1 cup cashew milk 2 tbsp nutritional yeast 2 cups spinach , chopped 1/4 cup raw cashews (optional...) 1 tsp garlic powder 1/2 tsp salt 1/4 tsp pepper Chili pepper flakes (optional) Cook pasta according to directions on package. Combine the remainder ingredients (except spinach) in a blender and blend until smooth. Add more cashew milk if needed. In a pan heat 1 tsp avocado oil and add chopped spinach, season with salt and pepper. This should wilt down in only 30 seconds! Once pasta is cooked drain add to cooked spinach and add in the sauce. Adjust seasonings (I add a bit more nutritional yeast) and heat for 3 minutes then enjoy! . . . ๐Ÿ˜€ credit @veganvultures ๐Ÿ

Homemade kale chips ๐ŸŒฟ All I do is break the kale into bite size pieces, lather them in coconut oil, lay them out on a pan, sprinkle sea salt on them, and then put them in the oven at 300 F for about 20 mins (rotating half way through).
