Lost power earlier, so had to post pone dinner. Since I didn’t have a lot of time once the power did go back on, I ended up defaulting to a classic I haven’t had in a while...Tacos. 🌮🌮🌮 I stuck to a very easy black bean and mushroom taco and added lots of cilantro and avocado to the mix plus some jalapeño pepper slices. All I did was sauté some mushrooms and onion slices together until the onions were translucent. I then added a can of rinsed and drained black beans and sliced up baby bell peppers then added 1/2 tsp garlic powder, 1/2 tsp dried oregano, 1/2 tsp thyme, 1/2 tsp adobo seasoning and a few sprigs of roughly chopped cilantro. 🥑 Cooked this until it was fragrant and then stuffed them into taco shells with some greens, avocado and a squeeze of lime juice. Honestly, the meal I didn’t think I needed until the power came on. Very glad it did come on especially since I couldn’t stop staring begrudgingly at the neighbors in the complex across from us unaffected by the power outage enjoying their power as I stubbed my toe in the dark. 🙃 Happy early Taco Tuesday everyone! 🌮

FRUTAS: DEMASIADA AZÚCAR? ⁉️ 1a PARTE! •••• Este post nace a partir de un paciente que asiste a un control ambulatorio. 60 años, diagnosticado de hipertensión y diabetes tipo 2 hace un año. Al consultarle por sus hábitos dietéticos, comenta que desde la detección de su diabetes había dejado de comer fruta por completo⚠️. Lo anterior debido a que él sabía que tenía demasiada azúcar y lógicamente con su condición no debía consumirlas. Frente a esto es necesario preguntarse: ¿Es realmente perjudicial el consumo de frutas debido a su ‘alto’ contenido de azúcar?. ¿Por qué le tenemos tanto miedo a comernos un plátano cuando nos estamos cuidando?, y, sin embargo, no nos preocupa consumir productos altamente procesados PERO con 0 azúcar y lleno de ingredientes que ni siquiera sabemos que son 🚫. Ni tampoco nos da miedo incluir bebidas light en nuestras dietas, porque claro, no aportan calorías ni azúcar, y no nos importa la alta cantidad de endulzantes no nutritivos que poseen, ni sus colorantes altamente tóxicos, ni su sin fin de ingredientes posiblemente perjudiciales para nuestra salud. Crispy • Tofu I used my #airfryer to make #tofu and it came out perfect! Crispy & crunchy on the outside, yet soft and pillowy on the inside. We are it over a bed of mixed green, quick pickled carrots, avocado, and #spiralized #zoodles • • • Quick pickled carrots: 6 Tbl vinegar 1/4 cup sugar 1/4 tsp salt 1 cup carrots, thinly sliced Whisk all except carrots (radish is great also!). Add carrots and marinate at least 30 minutes. • • Tofu marinade/dressing: 2 Tbl soy sauce 1 tsp rice wine vinegar 2 tsp sesame oil Cornstarch Mix all wet ingredients. Place drained and cubed tofu into and marinate at least 30 minutes. Toss tofu pieces with cornstarch. Ok this post-gym day meal was a weird one. Cheesy carrots by @healthfulradiance (check em out!!), cabbage tabouleh-ish salad (just cabbage, cucumber, tomato, red onion with a butt load of parsley and garlic and lemon), yellow pepper, steamed cauli w/ tahini buffalo driZz, baked eggplant (+ tamari glaze) and a tiny bit of leftover chickpea muffin. Guess I was craving veggies what’s new

Fried red onions, mushrooms 🍄 , peas, chickpeas and avocado 🥑 with coconut oil and spices 🍚. The result was a creamy stir fry that fits perfectly with rice 😋💚. . Happy monday lovely people in my phone 💚 I hope you all had a good start to the new week? Mine was packed with work and appointments so I’m just happy to be home 🏡. They’re going to kill me!!!😳 🌱Recipe: Press excess liquid from 1-14oz block extra-firm tofu and pat dry. Cut into about 3/4 inch cubes and bake at 400F until golden brown, about 20-25 minutes. Cook lo mein or rice noodles as per packet directions. Reserve 1/4 cup noodle cooking water. Whisk: 1/4 cup cooking water from noodles, 1/4 cup peanut or almond butter, 3 tbsp low-sodium tamari, 3 tbsp rice vinegar, 1 tsp maple syrup, 1 tbsp minced ginger, 2 minced garlic cloves, 1/4 tsp red pepper flakes, 1/3 cup chopped scallions (white and green parts). ( I kept my sauce oil-free but you can add 1 tbsp toasted sesame oil if desired.) Combine sauce with baked tofu and mix. Heat tofu with sauce on low in saucepan, adding desired amount of noodles into the pan until heated through. Add generous squeeze of fresh lime, chopped roasted peanuts and chili flakes before serving. Salt to taste. 🌱Crispy Coconut Cauliflower Bites and cabbage slaw...dressed with @havenskitchen cashew lemongrass sauce. 🌱Recipe cauliflower bites: remove florets from 1 cauliflower and cut into approximately 1-inch pieces. In a large bowl, whisk 1 cup coconut milk, 1 tbsp olive oil, 1 tbsp sriracha, 2 tsp garlic powder, 2 tsp ground cumin, 1/2 tsp chili powder, 1 tsp paprika, salt to taste. In a separate bowl, mix 1-1/2 cups whole-wheat panko bread crumbs with 1-1/2 cups shredded coconut. Add cauliflower to coconut milk mixture and let it soak for about 5 minutes. Remove cauliflower piece by piece, coat with breadcrumb mixture and place on parchment-lined baking sheet. When all florets are coated, bake at 450F about 25 minutes, flipping half way. Serve with lemongrass nut sauce. 🌱Cabbage slaw recipe: Shred 1/4 red cabbage and 1/4 green cabbage. Slice finely 3 scallions. Cut 1 carrot and 1/2 cucumber into matchsticks. Toss together with drizzle of neutral oil. Toss again with your favorite dressing. I used @havenskitchen Cashew Lemongrass sauce. That falafel bowl I posted a week ago reignited some serious cravings, but that has now been fixed!😋 Happy MLK day! (I know I’m a little late haha, sorry!) I had a lock-in overnight so I spent the morning relaxing with a book and my dog, then the afternoon ”meal prepping” for the rest of the week (pretty much this bowl x3). I get it, peeling, cutting, and cooking can seem just like another really big chore. So my biggest tip is to meal prep as you go! That means just cooking extra of whatever you’re making at the moment. I’m happy to have my kitchen back and have been cooking up a storm all day. I had puréed vegetable soup so many times in Portugal and couldn’t wait to make my own! This is Cookie + Kate’s Creamy Roasted Cauliflower soup with smoked paprika roasted chickpeas. Cashews are a lovely addition to the soup, which makes it creamy good. Quick, easy, and super healthy! In this veggie bowl I added 🥗 ⤸ - A bed of baby spinach - Black beans - Onions - Green pepper - Pecans - 1/4 cup of leftover veggie pasta from last night - A little splash of cheese (healthier if you don’t add this) I demolished this pretty fast 😅 There’s honestly so much you can do with some greens, beans, veggies, and a bit of leftover dinner. Make a dressing or add a bit of cheese! I even like to add pomegranate seeds for that extra juicy crunch. Here’s a bowl I had for lunch yesterday with air fryer tofu (I just coated it in some turmeric, salt and pepper and then left in the air fryer at 200 degrees C/390 F for around ten minutes), noodles, tomatoes, cucumber, sweet corn, spinach, peas, and blueberries for some sweetness. 🌱Packing meals is a little hard when it’ a full day on the go. But it’s totally worth it! Trying to eat out as a vegetarian is pretty easy in most places, eating out as a vegan, slightly harder but doable. BUT eating out when you are transitioning and trying to eat the most whole food plant based meal with an array of colors, nutrients, protien, carbs, and healthy fats is HARD. A house salad just won’t cut it. And i’ll probably be ‘hangry’ an hour later. So I plan. How many hours will I be out? What will I be doing? How much food do I need? Today I packed a buddha bowl for lunch and a smoothie as my afternoon snack. Approximatly 5 hours of fuel for a day out running erands and going to a doctors appointment. I am prepared, I am eating well and keeping my daily dozen goal 💪🏼

Good morning! ⠀ .⠀ Have you over-indulged this Christmas? Me too! So today I am starting the day with a virtuous green smoothie bowl. I've thrown in some spinach, strawberries, apple, lime, chia seeds, ginger, wheatgrass and protein powder. As for toppings, I've gone for a sash of granola, fresh and dried fruit, hazelnuts and pumpkin seeds. (It looks like a summer garden to me!)⠀ .⠀ I hope you had a super Christmas! Good evening! A late dinner tonight after double spin and a long day at work. ⠀ .⠀ How many veggies can you fit in one bowl? I have been experimenting a bit with my spices (hehe). We have paprika roasted sweet potatoes, crispy chilli tofu with a Sriracha sauce (yum!), roasted lemon cauli and cinnamon roasted sprouts (they work!), crispy sumac spiced kalettes, creamy avocado, fresh salad leaves, crunchy roasted smoked paprika chick peas and pumpkin seeds complimented with sweet pomegranate seeds and juicy dried goldenberries. That was a mouthful!
