750 calories vs. 140 calories “I’ll just grab a protein shake”. Whilst shakes and smoothies are convenient, their calories can vary considerable. ⠀ Shakes and smoothies can be good for weight loss BUT also for weight gain. Whilst a very basic protein shake - just the powder -can be less than 150 calories, if you start adding a few things👩🏻‍🍳to make that “basic” shake more exciting or to taste better, the calories can really add up. ⠀ P.s. A wise fitness friend told me that I was neglecting my quads, and he was right! Did the leg extension machine tonight for the first time in a long time and maaaaaan was it uncomfortable 😥😥. I've always focused on my glutes and hamstrings, but I have to agree that a well rounded lower body needs dem quads! So from now on, I'll make an effort to incorporate more quad focused exercises, not just depending on secondary muscle work. 🌵Mexican Lettuce Wraps🌵 (Serves 2) ●1/2 green pepper chopped ●1/2 onion chopped ●1 t coconut oil ●2 cups cooked rice ●1 cup red kidney beans rinsed ●1/2 cup sweetcorn ●1 small clove garlic minced ●1 T chopped parsley ●1 t garlic powder ●1 t cumin powder ●Salt & pepper -1 Put corn kernels in a hot dry cast iron pan to toast them a little. (Alternatively roast whole cobs on the grill) -2 Brown onions and greenpepper in a pan with coconut oil. Add beans and spices and cook for 2 min. Add a splash of water if it dries out. -3 Mix the corn, the bean mixture, rice, parsley, and garlic together in a bowl. Season to taste. -4 Serve in lettuce leaves topped with Diced cucumber, tomato, and avo.

I also try to limit my Soy consumption to max 400g a day. 🐘Tempeh - the better Tofu! Fermented (and thus healthier) and tastes better (in my opinion)! This vegan Shepard’s pie was so so good! Packed with veggies it is super healthy while packing a flavorful punch that makes this dish taste so decadent. . . Shepard’s pie . . 1 russet potato, peeled and diced . . 3/4 cup frozen broccoli . . 1/2 cup chopped green beans . . 1/2 cup carrots, chopped . . 1/2 yellow onion, chopped . . 3/4 cup mushrooms chopped . . 1/2 cup broccoli . . 1/3 cup brown rice flour . . 3/4 cup veggie broth . . 1/2 cup plant milk . . 1 tbsp garlic powder, onion powder, salt, and soy sauce . . Preheat oven to 375 F. In one pot boil potatoes and cauliflower until fork tender. Blend cauliflower and potatoes until fairly smooth. Add plant milk as needed. . . Meanwhile, in another pot, form roux by combining flour and veggie stock over medium heat. Add plant milk, adding more as needed until desired consistency is reached. Add spices and soy sauce. Next add all the rest of the chopped veggies to the roux. Cook mixture until veggies are partially cooked. . . Transfer vegetable mixture into a baking dish. Top with the mashed cauliflower mixture from earlier. Put in oven for approximately 25 minutes or until roux is bubbling. Turn the oven onto a low broil until the top is crispy and brown. . . Recently I have been in an exploration of my physical vessel. Testing it’s limits, learning how to better use it, and finding appreciation for it. I’ve been posting a lot about yoga, self love, and fitness. I lost a lot of followers, but I don’t care at all. We are all going through phases and sometimes I take pictures of beautiful landscapes and travel if that’s my muse, sometimes of cool people who i enjoy deeply if they are my muse, sometimes delicious plant nutrition if that’s turning me on, but right now i am most inspired by my own dang self. I’m no super model, I’m not a personal trainer, I have no reason other than my own joy. No one has to care, I don’t need an audience. I just want to share the feeling of strength and pride 🦁♌️ to try to inspire it in others. “You painted the shape of a woman because it gave you pleasure. Day 11 of my favorite things... Okay okay, I know what you're thinking but it's not Bloody Mary's. It's MASON jars! All shapes, all sizes. It's not a VEGAN food item but let me tell you, it makes EVERYTHING easier on the go. Also: PSA... We can all afford to use less plastic 👌🏻Our planet thanks you in advance. Mason jars make for awesome reusable drinking glasses, food storage containers for things like sauces, salad dressings, portion controlled snacks like nuts, seeds, protein powder. You can even bake cupcakes in them! ☺️🍰Overnight oats are such an easy to prep breakfast and can be made to last for up to a week! Also: they're inexpensive, less than $1 each. You can find them at almost any retailer as well as the dollar store. 🙌🏼🙏

My "oval office" really can be a happy place sometimes. Think warm thoughts! ... Leave it to cold weather to have me miss getting left in the dust by college kids at a hot #tracktuesday 6x1200m workout during summer training for @ChiMarathon. ... I typically don't throw down on track intervals. Instead, I prefer to throw in some kicks during parts of road running. ... But for some reason, that particular day on UC's campus, I found myself doing the same workout as a few other dudes that afternoon. ... I don't remember their names, but they were SO FAST, and helped me get more out of what was probably going to be less effort by me that day. ... It can be lonely at times, self-coaching my training for long races, but there are also times that some unexpected support comes along, then takes in my longwinded 26.2 mile stories. ... As Scott Fauble would say, "Maybe your legs are there, maybe they aren’t. Either way, just ripping for the sake of ripping is a beautiful thing and when that happens, it’s freeing. ... When you do that, when you set all the other extraneous $&!+ that surrounds training and racing to the side, then you’re independent of extra baggage and it’s just you running that’s left. ... Running becomes just putting one foot in front of the other and trying to do the best you can in the moment you’re in and whatever that is, is ok." ...
