Healthy koolhydraat-boost 👍 Ingrediënten (1 omelet) * 2 eieren * 1 el rijstemelk of andere plantaardige melk * snufje zwarte peper * mespuntje zeezout * 1/2 tl oregano, gedroogd * handje verse basilicumblaadjes, fijngesneden * 2 tl kokosolie * handje babyspinazie * 1/2 avocado * 1/2 tl honing * handje walnoten * 30g zachte geitenkaas, natural * cayennepeper, optioneel Bereiding * Doe de eieren, rijstmelk, zwarte peper, zeezout en oregano in een kom en klop het mengsel met een garde luchtig. * Voeg de fijngesneden basilicum toe aan dit mengsel. Roer nog een keer. * Verwarm een koekenpan met de kokosolie op laag vuur. Zodra de olie is gesmolten, kan het eimengsel de pan in. * Leg de spinazie bovenop het eimengsel. * Zet het vuur uit zodra de eieren gestold zijn. * Lepel het vruchtvlees uit de avocado en snijd het in blokjes of reepjes. * Hak de walnoten fijn en verdeel over de spinazie. * Bestrooi de omelet met de verbrokkelde zachte geitenkaas en wat honing. * Rol op en leg op een bord. * Als je van spicy houdt, kun je nog een mespuntje cayennepeper over de omelet heen strooien. My favorite dessert- THE PASSION FRUIT PIE! 👇 . Recipe: . Ingredients mousse: 1 cup of raw cashew nuts (about 100g) 1 cup of passion fruit pulp (I used 3 medium passion fruit - 240ml of pulp) 1 cup of filtered water Sugar to taste (I used 4 tablespoons demerara sugar) 1/2 teaspoon of agar-agar (about 2g) . Ingredients crust: 2 cups raw walnuts pinch sea salt ¼ cup ground flaxseeds 10 dates soaked for 30 minutes and pitted. . Crust preparation: In a food processor , pulse all the ingredients together until the mixture balls up on one side of the bowl. Grease a 13” tart pan and press the crust into it. Bake for approx. 20 min. Let it cool for 10 minutes. . Mousse preparation: Put the raw cashew nuts in a bowl, cover with double water and soak for 8 hours. Then drain, wash and set aside. In a blender, place the passion fruit pulp and water. Pulse blend shortly with care not to completely blend the stones. Pour this through a siv to remove stone pieces. Put this mixture in a pan and add sugar to taste and agar-agar. Mix and simmer over medium heat. Stir often. When it starts to boil, lower the heat, count for 30 seconds, and then turn off. Put this mixture in the blender, add the cashew nut and blend until you get a very uniform cream. Pour it over the crust allow to cool and refrigerate for about 4 hours. .
