If you’re a VEGAN 👉Let’s follow us @Veganmakefun ** ""Black sticky rice is one of my favorite desserts and I ate it almost every day during our holiday in Thailand. When we came back home, I developed a recipe for Blue sticky rice and I am finally ready to share it with you 🦋🤗. . Blue sticky rice (2 servings) with mango puree . Ingredients 150 g black sticky rice 100 ml coconut milk 100 ml coconut flavored rice milk 1 Tbsp dried butterfly pea flowers 1 Tbsp raw cane sugar 1 generous pinch of salt 4 tbsp pomegranate seeds 200 g mango puree . Instructions Soak black sticky rice in water for at least 4 hours (or overnight). Wash and drain thoroughly. Cook black sticky rice with 350 ml water in a rice cooker or a heavy pot with a tight-fitting lid for about 35 minutes (or until the liquid is absorbed completely). In the meanwhile, mix coconut milk, rice milk, and dried butterfly pea flowers and allow to soak for 20 minutes. Strain milk through a sieve (squeeze dried flowers to extract extra color). Mix with raw cane sugar, and salt and bring to the boil. Remove from the heat and mix with cooked black sticky rice. Top with mango puree and pomegranate seeds (or a few berries) and edible flowers. Ingredients For the filling 8 oz of crumbled tofu 1 tbs of nutritional yeast flakes 1/2 tsp of apple cider vinegar 3/8 tsp of pink salt Dash of black pepper 1 1/4 cups of minced butternut squash For the ravoli 2 cups of semolina flour 2 cups of all purpose flour 1 tsp of garlic powder 1/2 tsp of pink salt 1 cup of aquafaba 1/4 cup of filtered water + 1tbs and 1 tsp For the butter 1/3 cup of vegan butter A few sprigs of fresh oregeno 1/2 tsp of black pepper Directions 1. In a bowl combine first 6 ingredients. Mix well and set ricotta aside. 2. Preheat oven to 400° F place squash onto a greased baking sheet and bake for twenty minutes. 3. For the ravioli combine all dry ingredients and all wet ingredients mix well and add wet to dry. Mix until dough forms and knead well. Cover and set in fridge for 30 minutes. 4. Remove squash from oven and set aside. Grab dough and roll out into a very thin rectangle. Add a large pinch of ricotta and squash into small piles on one half of the dough sheet. 5. Fold over other half of dough sheet and press a ravioli stamp around each pile. In a large pot bring water to a boil. 6. Reroll dough and repeat process until finished. In a small pot on medium heat add butter and garlic powder. Let butter simmer for around 4-5 minutes or until browned. Remove from heat and add oregeno. 7. Boil raviolis until they float to surface. Remove and roll in butter. Plate and add oregeno and finish with fig slices and bread crumbs. Enjoy!
