It’s been a while since I’ve posted anything personal but I wanted to share a couple shots from a talk I did recently as part of @pechakuchastjohns. I got to tell the story of how my love of nature and gardening came to be, and how I get to creatively channel that love in my home and work life (alt title: how I became a big hippie). I was also lucky enough to hear other speakers share their inspirational stories and left the event feeling empowered to keep using my gifts and passions to make a difference in the world. If you have a chance to speak at or attend one of these events in the future, I definitely recommend checking it out.

10/10 Vegan charcuterie board from @realfakemeats in Halifax. Got to share my favourite xmas gift from my family with all of them, which was the best part. Might become a new Tibb’s eve tradition?
Even though I was absolutely stuffed from my lunch date at Peaceful Loft with @skyemakeup followed by a bountiful vegan potluck, I had to save some space to try out the new locally-made vegan cheeses from @likenouddercheeses. I got the soy rosemary feta, sunflower cheddar, and walnut parmesan from their booth at the @scout.street.style night market. And I have to say that I’m blown away not only by the fact that there’s even a vegan cheese company here now, but that they’re coming out of the gate with such refined varieties that each have their own unique experience and charm. It’s the kind of product I would expect to find at a boutique natural grocery store in Toronto, and I’m so happy to see my friend @ashkay709 and her friend Brittany upping the bar for local plant-based creations 🧀
Wanted to share a special find I came across today on stavanger drive that I thought a lot of you would appreciate. It’s a refill station for olive oils and balsamic vinegars, where you save $1 (and the environment) by bringing your own container. I tasted a bunch of them then decided to fill my mason jar with the fig balsamic and unfiltered Greek olive oil. Check it out yourself at @simplyforlife_st_johns, apparently they’re also doing a tasting and demo of them on Saturday from 12-5.
I can finally announce a dream project I’ve had the pleasure of working on these past few months with a true idol of mine, Marian Frances White. Marian is one of the ORIGINAL nl vegans (from long before Facebook groups or instagram hashtags existed) and is releasing a new cookbook called “Island Vegan” in June 2019, which will include lots of new recipes along with some updated ones from The Eldamar Cookbook, the first vegan cookbook ever published here in 1995. Not only did I get to take the food photos for this book, I also got to sample the food I photographed and I can guarantee that it’s a book you’re going to want to have in your kitchen, whether you’re vegan or not. I’m not even much of a recipe person myself but this is one book I know I’ll use often, especially to make the veggie paté, my new go-to for potlucks.
Finally got to try out @freshstartfauxmage vegan cheese made in PEI. It’s so good, I ate the whole tub in one go. Next time I’ll try and savour it a bit lon...actually never mind who am I kidding I know I’ll just eat the whole thing again. Can’t wait to see more Canadian vegan cheese companies hit the shelves.

First time trying dandelion greens tonight - felt good to eat the weeds! Sautéed them in pesto and balsamic with portobellos and zucchini. Spread some tangy fermented sunflower yogurt on the bread. Big thanks to my friend Marian for the greens, homemade pesto, and vegan yogurt. This is one of the tastiest things I’ve eaten in a while.
Got to participate in a “vegan pizza focus group” event at @createolio tonight where we tested out a bunch of new vegan pizza toppings. The cashew mozzarella they created was amazing, and we’re all very excited about the possibilities with chickpeas and artichokes. A surprise favourite was their maple syrup apple vegan dessert pizza which blew us away. Big thanks to Trevor for organizing this and supporting our local vegan community. Definitely keep watch to see what they add to their permanent menu!

It was KILLING me to hold off posting this review until they got more of the @beyondmeat burger in stock at @evoo_in_the_cy but they have it again so here we go! Oh. My. God. This is without question the best veggie burger in existence. You know how there’s a difference between a regular meat patty and a gourmet, hand-formed burger? This is just like the latter, and so convincingly so that it’s kind of scary when you first bite into it and see, feel, and taste that unmistakeable meatiness. Everybody NEEDS to go try it, and hopefully it will become a permanent item on their menu. Absolute game-changer 🍔

Did you know that Exile restaurant in @jaghotel has a VEGAN burger this month for @theovercastnl burger challenge? I just tried it and it was one of the best vegan burgers I’ve ever tasted; layers of grilled portobello mushroom, marinated fried tofu, house-made crispy root chips and creamy beet hummus. Drop down for lunch and give it a try, and be sure to vote for them as the people’s choice winner! If there’s enough interest they’ll keep it on the permanent menu 🍽 note: they use one fryer so if cross-contamination is an issue to you, you might not want to partake.

So excited to have been a part of this project and I’m really happy to see the finished product. Been waiting weeks for @skyemakeup to get home so we could break out the canned jackfruit from @thehealthyvibenl and make these pulled jackfruit tacos together. It was worth the wait ❤️
Got to test out @wildmotherprovisions Newfoundland Beer Vinegar in an improvised “Beer Batter Cauliflower Wings” recipe tonight and it turned out incredible. I don’t even like beer and I loved the taste of this vinegar! Here’s what I did: stir-fried three cauliflower heads (broken up) in a mix of NBV, ACV, liquid smoke, sriracha, and mustard until they became soft and started to turn brown. After about 15 minutes of stirring and adding water whenever they were about to burn into the pan, I added some tahini and nutritional yeast to form the batter and then turned off the heat.
Planning is well underway for VegFest 2018 and we’re excited to announce that the date will be Sunday, August 26th! We just had an amazing vegan meal/meeting at @sushinami_stjohns and look forward to visiting other vendors as we continue to organize the details. Stay tuned!
Vegan Mac and cheese with tofu ham. This turned out perfect: cook pasta of your choice and mix in a cheese sauce made of nutritional yeast, apple cider vinegar, and tahini. Fry up some tofu with oil, liquid smoke, soy sauce, and balsamic vinegar. Enjoy!

Man, chickpeas are so versatile! For supper I’m having a smashed chickpea “tuna” salad AND I used the special water from the chickpea cans (called ‘aquafaba’) to make a vegan whipped cream dessert. Some day I’ll have to run a chickpea farm just to satisfy my habits 👨🌾

I was just interviewed for a documentary on veganism in NL! The movement has come a long way in the last 7 years since @skyemakeup and I decided to put our morals where our mouth is. I’m always happy to talk about it with anyone who’s willing to listen.
My first time baking pie was a success! I used freshly foraged apples from my boss’ backyard and elderberries from mine (which I only recently discovered are edible) and improvised a vegan pie crust without margarine because I was too lazy to go to the store. It still turned out to be buttery and flaky, just like I had hoped 😊
Pulled jackfruit tastes JUST like pulled pork. I made this pig-free bagel sandwich tonight using canned young jackfruit from @thehealthyvibenl. Now excuse me while I die in bed from satisfaction 💀🤤😌

Did you know that Hong Kong restaurant downtown makes the most delicious house-made tofu I've ever tasted? It's actually so flavourful and literally melts in your mouth. They have an impressive number of vegan options, definitely a hidden vegan gem in the city. Thanks @noli_malone for sharing this secret with us ✌️

I got to meet some of the beautiful residents of Happy Barn Farm Sanctuary last night. Seeing them living happy and free from harm was such a harsh contrast to some of the industrial agriculture/slaughterhouse videos I've seen lately. It's incredible how differently we treat other animals based only on our ideas of their value to us, not their inherent worth as individuals. Thank you to @vegan_reneegade and @hregular for all the hard work you do for them 🐔🐷🐶🐱🐰

Had the most delicious farm-to-table tofu bowl today at @thegroundsatmurrays. So fresh, so flavourful. If you haven't been there yet I definitely recommend it. We even got a tour of the beautiful @murraymeadowsfarm greenhouses afterwards, full of organically grown veggies 🌽🥕🥒🌶🍅🍉🌿
It's funny, I hate tea and I hate carbonated drinks, but I love kombucha. Especially this blue majik @livekombucha from @thehealthyvibenl, especially when I remember to bring my reusable mason jar.
