I save my weekends for smoothie bowls because they don't transport well to work for breakfast! However, today when I rolled out of bed and felt my toes touch the frozen floor (I'm being dramatic yes, i live in FL😅) I thought I wouldn't be up for the tradition. Didn’t realize how exhausted I was until I plopped myself on the couch and passed out. Now it’s passed midnight, but all well. I wanted to post this earlier but you know what happened now. 😂 Dinner was amazing though and now looking forward to leftovers. 😊 Made some Lentil and Tofu Curry with some brown jasmine rice. I included the tofu for texture. This tofu was pre-pressed extra firm tofu and it has such a fantastic chewiness to it. Recipe is below. And with that I’m hoping you all had a more productive evening then I did (though what am I talking about sleep is highly productive). 😴 . Tofu and Lentil Curry 1/2 cup green lentils 1/2 block pressed tofu 1/2 red onion, diced 3 pieces garlic, minced 1 inch ginger, minced 1 red bell pepper, diced 1 sweet potato, cubed 1 small can tomato paste 1 tbsp curry powder 2 tsp cumin 1 tsp ground coriander 1 large tomato, diced 1 cup full fat coconut milk 3 cups vegetable broth Salt to taste 🥣 . Sauté onion and garlic in a medium pot until onion softens, about 3 minutes. Add in ginger and remaining spices and sauté until fragrant, about 2 minutes. Add in remaining ingredients and bring to a boil. Once at a boil, reduce heat back down to a simmer and allow content to cook for 40 minutes until thickened and lentils soften. To cook this in your instant pot, just add all ingredients to it, then seal and set to manual for 17 minutes. Allow to come up to pressure and cook, and to naturally release pressure. Adjust seasonings as desired. ✨ #vegansnack #vegansmoothie #veganstrong
