Creamy potato soup... plant-based creamy that is! 🙌🏼 So fast and easy on those busy days when you crave a warm and comforting meal🍵💚 Recipe: Chop onion and celery and simmer in a few inches of water (about two cups) while you chop red or yellow potatoes. I used both kinds and these were mini potatoes. When vegetables are soft, blend about 1/2 c raw cashews with 1 cup water until creamy. Then add about two more cups of water to the cashew cream and add to soup. Season with bouillon, garlic, salt, pepper, and dried parsley. Simmer for another 10 -15 minutes on low heat. For soup I don’t really measure things so just use your creativity and preferences. It will turn out yummy I’m sure!! #vegan #vegansoup #plantbaseddinners

Vegan White Lasagna Soup from @rabbitandwolves Prep Time: 15 mins Cook Time: 15 mins Total Time: 30 mins  Course: Main Course, Soup Servings: 6 Author: Lauren Hartmann Ingredients 🔹Cashew Cream 1 Cup Raw cashews, soaked 1 Cup Vegetable broth 1 Tablespoon Lemon juice Pinch of Salt and pepper 🔸For the Rest of the Soup 1 Tablespoon Olive oil 6 Cloves Garlic, chopped 1/2 a Sweet onion, chopped Juice of 1 Lemon 6 Cups Vegetable broth 2 Teaspoons Italian seasoning 1/4 Cup Nutritional yeast 2 Teaspoons Agave syrup 8 Lasagna sheets Salt and Pepper to taste Instructions 🔺The cashews need to be soaked for 6-8 hours. Overnight is great! If you are in a pinch, you can soak the cashews in boiling water for about 15- 30 minutes. 🔹Once you are ready to make the soup, make the cashew cream first. Drain the soaked cashews and add them to a blender with the rest of the cashew cream ingredients. Blend on high, scraping down the sides as needed until the cream is super smooth and velvety with no texture. This may take a few minutes. Set this aside. 🔸Now, in a large soup pot, heat the olive oil on medium high. Then add the garlic and onions to the pot. Saute, reducing heat as needed until the garlic and onions are slightly caramelized. This may take 5-10 minutes. 🔹Then add the lemon juice to the pot and scrape any bits of garlic and onion off the bottom. 🔸Next, pour in the vegetable broth, and whisk in the Italian seasonings and nutritional yeast and agave. 🔹Now, pour all the cashew cream you made into the pot and whisk to combine everything. 🔸Season with a few pinches of salt and pepper. Bring to a simmer. 🔺Next, break the lasagna sheets into about 1-2 inch pieces. Then add them to the soup. 🔹Simmer, stirring frequently until the noodles are al dente. Check your package for timing. 🔸Once the noodles are done, taste and adjust seasoning. I needed to add more salt. 😋 Serve immediately. I like to add some spinach or greens to my bowl and pour the soup over so my spinach doesn't get over cooked! Top with fresh herbs! Pytacie w wiadomościach o przepis na dzisiejszy wegański rosół, ten to akurat to akurat słaby przykład ponieważ gotowałam go godzinę zamiast kilku, ale byłam już zbyt głodna by czekać stąd też przepis jest mało tradycyjny 📜 Dzięki temu szybciej uzyskałam rosołowy smak choć pewnie prawdziwy kucharz nazwałby to prędzej wywarem niż rosołem😊 Lecz odkąd przestałam gotować zupy na mięsie zrozumiałam, że rosołowy smak powstaje przede wszystkim dzięki dodatkom, przyprawom i nośnikowi smaku - olejowi 💥 Ponieważ skoro ludzie nie są w stanie rozpoznać czy rosół był gotowany na zwierzętach czy nie to chyba mówi samo przez się🙃 Zatem oto przepis na dzisiejszy ekspresowy rosół (zwielokrotnienie ilości warzyw poprawi smak); do gotującej wody (5/7l) wlewamy 3 duże łyżki sosu sojowego, wrzucamy łyżkę soli, sporą ilość pierzu i suszonego majeranku 🌾 Na początku gotowania dodaję również olej rzepakowy lub oliwę, ciężko powiedzieć ile bo robię to na oko ale pewnie z 2/3 łyżki. Dodajemy 4 marchewki w słupkach, dwa korzenie pietruszki, ćwiartkę selera, ćwiartkę sałaty pekińskiej lub kapusty włoskiej, białą część pora w 4 częściach, cebulę przekrojoną na pół (najlepiej opalaną), 3-5 ząbków czosnku (im większe tym mniej), pęczek szczypiorku, łyżkę imbiru w paskach i jeśli macie możecie dorzucić odrobinę wasabi 🔥 Warto dodać przynajmniej pięć liści laurowych, ja jestem też fanką suszonego czosnku którego dodaję w ilości minimum pół paczki. Gotujcie możliwie kilka godzin, chyba, że tak jak ja nie macie dużo czasu ⏱ Ja jem tradycyjnie z białym makaronem, to jedno z niewielu dań do którego nie pasuje mi ciemny makaron 😊Oczywiście musicie się liczyć z tym, że jeśli stuningujecie zupę sosem sojowym i dużą ilością przypraw rosół nie będzie tak przejrzysty jak ten tradycyjny, ale co to właściwie zmienia poza tym, że może usłyszycie drętwy komentarz teściowej...😊 #vegan #weganskirosol #crueltyfreefood #vegansoup #weganskiobiad #tanie #zdrowe #nochickensoup #weganizm #plantbased #polishvegan #soup #betterthanoriginal

We had the opportunity to feed the less fortunate and I’m glad everyone loved my Vegan Soup 🥣 👏🏽 #onceamonth Vegan | 30 minuets | Serves 4 - 6 Ingredients 1 small onion, finely diced 2 cloves of garlic, minced 1 medium carrot, peeled and diced 2 celery stalks, diced or sliced Half a medium zucchini, sliced ½ teaspoon dried oregano 1 bay leaf 1 can (14 oz) of diced tomatoes 3 - 4 cups vegetable stock 1 medium potato, peeled and diced 7 oz cooked white beans Pasta 1 1/2 tablespoons soy sauce or salt to taste Freshly ground pepper Any fresh herb to garnish (opt) Instructions Heat a large pot over medium-high heat and add a splash of water (you can use oil if you prefer), the onion and garlic. Sautee until soft then add the carrot, celery, zucchini, oregano and bay leaf. Cook for a few minutes to allow the vegetables to soften. Add the tomatoes, 3 cups of the vegetable stock and potato and bring to a boil. Reduce the heat to medium and cover the pot. Simmer gently until the potato is cooked through. Meanwhile, in a separate pot cook the pasta according to the package directions, drain and set aside. (I like to keep my pasta separate from the soup so that any leftovers don’t go mushy. You can also cook the pasta in the soup once the potato is cooked through if you’re going to be eating it right away). Once the potato has cooked through, add the beans, soy sauce or salt and pepper. Recipe - Soup Ingredients: Green tops from 3 bunches of radishes, rinsed 2 Tbsp olive oil (optional) 1 cup raw cashews 1 cup red lentils 4 cups vegetable broth 3 cups water 3 cups homemade cashew milk 6 oz Crimini mushrooms 3 cloves chopped garlic 3 Tbsp nutritional yeast 2 Tbsp hemp hearts (optional) Black pepper to taste, salt to taste. . . Cashew milk - 1 cup raw cashews, boiled in water for 10 minutes, drained. Blend drained cashews and 3 cups fresh water for 3 minutes on high. Do not strain pulp. . . Soup - Saute mushrooms and garlic in oil or on nonstick until garlic is aromatic and yellow brown. Add vegetable broth, saute, and lentils to large pot, bring to a boil. Add raddish tops, simmer for 20 minutes. Add nutritional yeast and hemp hearts, stir, then mix in cashew milk. Use an immersion blender on high to blend the soup.
