Finally home after a very tiring day, lots of walking and lots of working. Iโ€™ve been thinking about this all day and it didnโ€™t disappoint! ๐Ÿ˜Œ Spaghetti Bolognese with quorn mince (free), onion, aubergine and peppers for speed, one tin of tomatoes also speed and half a tube of tomato purรฉe (free). Week 17 - 4.5lbs off!!! Canโ€™t believe it!! Especially after last weekโ€™s loss! Plum and blackberry hand pies to mark the start of Autumn ๐Ÿ‚ Recipe below โ†ด These lil pies are super easy to make and you can prepare the compote with whatever seasonal fruit you have to hand โฃ๏ธRefined sugar free and SO delicious fresh from the oven with a coffee! โ˜•๏ธ Happy Sunday, Iโ€™m off to see my doggie friends ๐Ÿถ xoxoxo . . Recipe(makes 12) . 200g plain flour pinch of salt 100g vegan margarine 3 tbsp olive oil 500g plums, chopped and pitted 150g blackberries 2 tsp cinnamon 2 tbsp coconut sugar 1 tbsp chia seeds 3 tbsp almond milk . . Add flour, salt and margarine to a food processor and process until crumbly (or use your fingers). Mix the oil with 3 tbsps of water and gradually add to the crumbs until a dough forms. Flatten into a disc and wrap in plastic film for at least 30 mins. Add plums, blackberries, cinnamon and coconut sugar to a pan. Simmer gently for 10 mins until it starts to reduce, then add 3 tbsp of water and the chia seeds. Simmer for another 5-10 minutes, until thick. Preheat oven to 200โ€ขc. Roll out pastry and using a heart form, cut out 24 hearts. Add 1 tbsp compote in the middle, a little almond milk around the edge. Cover with another heart and use a fork to seal the edges tightly.
