If I described my favorite style of cooking it would be: Simple. Elevated. Unexpected. Delicious. . From time to time, I'll dive deep and spend hours creating something fairly complicated with many complex components. But even though those dishes are usually super delicious crowd-pleasers, I still find myself regularly being drawn to simpler food focused on fresh, local, & seasonal ingredients, treated with respect, perfectly balanced, and prepared with passion. To me, that is elevated cuisine. . I recently dined out at a local "farm-to-table" restaurant with decent sounding with vegan options, and when the food arrived at the table, I wondered if there was ever any respect for those ingredients. It felt and tasted as if the chef's passion and respect for ingredients departed a long time ago. It was almost as if the chef was "punishing" the food by the way it was almost completely unrecognizable on the plate. It was supposedly "farm-to-table" cuisine, but it was cooked to death, drowning in some sort of overly-seasoned & gloopy sauce. It was rather disappointing & I probably will not be returning any time soon. . Quite frankly, I feel as if everyone wants to call themselves a trendy "farm-to-table" experience these days, & they frequently fall quite short of my expectations. You see, my dear reader, you don't need to try to make your food complicated, trendy or fancy for it to be really great. Fresh, local, seasonal ingredients, treated with respect, well-balanced flavors & textures, prepared with a sense of adventure & passion. That's all you really need. Made the Tu-no Casserole from @straightupfood yesterday after @forksoverknives posted it in their feed. It was really good but it also wigged me out a little cuz it was so fishy. We had #tacotuesday a day early. Loved this fast #wfpbno recipe from the winter 2019 issue of #forksoverknivesmagazine ! Charred cauliflower and red onion tacos garnished with crisp red cabbage, green onions, and cilantro. Even the kiddo loved it! @forksoverknives

Vegan Chocolate Nut Butter Crispies 😍😛🍫🥜 These came out so so good with only SEVEN whole food ingredients 🤘🏼 For the base: •1/3 cup coconut manna (coconut butter) •1/3 cup peanut butter •1/3 cup almond butter •2 cups puffed millet •1/4 cup raw shelled hemp seeds Melt coconut, almond, and peanut butter in a glass bowl double boiler style until smooth. Mix in millet and hemp seeds and press into a glass casserole dish (I used a 9 x 9) and set aside. For the chocolate topping: •1/3 cup vegan chocolate chips •1/3 cup coconut butter •1 heaping tbsp cacao powder Melt together in a double boiler until smooth and pourable. Pour over base. Chill for several hours until set. For dinner tonight I made the macaroni cheese from the How Not To Die cookbook. I didn’t follow the recipe exactly - I added a tin of white beans blended into the sauce, and a tin of sweetcorn in with the pasta. I also served cabbage on the side, I didn’t include broccoli as the recipe calls for because we had it for dinner last night. It was delicious, my whole family liked it! My dad even said it was one of the tastiest meals I’ve made, he liked it because it “didn’t have any beans in it”... 🤫😏 I’m not usually a pasta fan but really enjoyed it! It’s completely oil free and WFPB, apart from the whole meal breadcrumbs which was a slice of whole meal bread from Aldi which has oil in it, as that’s all we had available. 🌱✨

Prepping for a cooking class tomorrow. I’m talking about easy meal prep and demonstrating Well Crafted Mac & Cheese Mix. Had to try it out. Tomorrow I’ll make the cheese sauce with a little southwestern rice and beans for a health and wellness class. I think they’ll enjoy it. Your health is multi-faceted. It’s not just what you eat and drink that dictate the level of your health. . How well are you sleeping? Those precious hours of sleep HEAL you. They RESTORE you. . How are you managing your stress? Are your relationships causing you more harm than good? The health of your relationships directly affect the health of your body and mind. . And as my sweet friend says, “Is your Love Cup full?” Helping others and giving from our hearts makes us FEEL better. When you’re not feeling your best, shifting your focus to making someone feel better can be fantastic medicine— but you cannot give love from an empty Love Cup. Ask for a hug. Say no to something you know you do not want to do. Make yourself a cup of tea. Watch your favorite movie. Take a bath. Stop glorifying “busy” and choose to consciously do nothing more than to refuel yourself. . I’ve not been well the past couple of weeks. Hence my lack of contribution to this space. I’ve not been getting the sleep I need. Having a nursing baby while also having chronic illness is a cruel, cruel joke. Some of my relationships have been emotionally draining. My Love Cup has been bone dry. Motherhood asks you to never stop giving. However, our children do not deserve a martyr mother. What does that teach them? I realized that teaching them to actively choose balance, peace, and self-care is much more valuable than to have them see an exhausted, exasperated mother. Motherhood brings me joy. LIFE makes me tired. I can *choose* to refuel, and then give to them joyfully. . I caught up on sleep this weekend. I reconnected with my husband. I shifted focus. I feel like a new woman. . My blood work came back...flawless. Zero markers of inflammation. No visible swelling or redness. Which is so surprising, because I was feeling BAD. Like, unable to walk on my heels, use my left hand... . My health is multi-faceted. My diet may be flawless, but my body needs more than plants to heal. It let me know. Loudly. I’m listening. I’m listening. I’m learning. . Are you? Listen to your body. Then advocate for it.

[ snuggle mama, snuggle ] ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Yesterday, I was making dinner and encouraging Eleni to play by herself so I could "just get dinner cooked" before my husband got home. 🍝⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But yesterday, in the midst of cooking and cleaning, she said from the playroom, "Snuggle Mama, snuggle." ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ She had never said this to me before as she's never been much of a snuggler. I turned off the water, checked on the food 🥦, and made my way to playroom. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I strive as best I can to play with Eleni when she asks me to because I know this won't last forever. I've made that a priority. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Yesterday, she reminded me of what matters most and what I want to be a priority.
