Homemade PIZZA on lazy Sundays? Happy Sunday evening! So, I thought I’d show you, again, what I eat in a day, when I’m at work! I try and vary it every week and, this week, I’m having exactly the same on both Monday and Tuesday! Breakfast- baked oats (more detailed post to come soon BUT, I based it on @emmoreton latest recipe), Snack 1- @whitworthsuk salted caramel seeds, Lunch- @musclefooduk haddock with a bean salad, cucumber and @good4unutrition sprouts. Snack 2- my new favourite @barebells.uk bar! I’ll obvs eat dinner and a pud once I’m home and may have a cheeky apple during the day too. Tomorrow night, in theme with #meatfreemonday, we’re having a root veg tagine! A JACKFRUIT COCONUT CURRY (recipe below 👇) A Creamy, indulgent coconut curry; mild, eloquently sweet & fragrantly spiced. Simple ingredients that compliment eachother. delicious chuncks of jackfruit and wilted spinach in the thick coconut sauce its Better than a takeaway- •1 tsp coconut oil •3 garlic cloves crushed •1 onion diced •1 tsp paprika, turmeric & Cumin •1/2 tsp ground coriander •1/2 cup passata •1 cup chopped jackfruit •200 ml veg stock •1/2 cup peas & carrots diced •1 can coconut milk •1 tsp coconut sugar •1 cup rice •200 g spinach •@alpro Yogurt & avocado to serve. Heat coconut oil, add crushed garlic,onion & carrot. Add all the spices,sugar & passata. cook & stir. Add the final ingredients. cook on high. Had a busy couple of days at work so haven’t been posting. Here is dinner from last night, heck chicken sausage and chickpea casserole with raw veg, just 1/2 syn for the two sausages. I did go over by 5 syns yesterday even though I didn’t eat much. Just didn’t really eat much speed and free food throughout the day as I was grabbing snacks and quick bites during a busy day at work which maxxed me out and then I just needed some malteasers after dinner. Oh well. Trying these for the first time. I’ve been craving waffles for a few weeks now and decided on these. I really like the @hungryjackfoods sugar free butter flavored syrup and the flavor of the @startrightfoods blueberry waffles. The texture of the waffles will take a little time to get used to, though. El smoothie es una mezcla de frutas congeladas o frescas, aveces se le agrega verduras, puede quedar con una consistencia más líquida para poder beberlo y otras veces más espeso como este. Para este hicimos harto, ya que somos 5 los que comemos en esta familia de 6 😬 **yo uso plátanos frescos, no congelados, los berries o demás frutas son las que congelo. -3 plátanos medianos -1 taza de frambuesas congeladas -1 taza de arándanos congelados -1 taza de moras congeladas -1 1/2 taza de leche de almendras aprox. WHAT I EAT IN A DAY 🍋💕 I just posted a new YouTube video with a full day of eating + working out + my skinny coconut margarita recipe 🥥🙌🏼 When it comes to what I eat, TBH it varies from day to day. I’m a very intuitive eater. Veggies are typically the star of the show. Some protein, lots of good fats (like the occasional jar of Pb 🤷🏼‍♀️) and high fiber carbs. It keeps me full, energised and my blood sugar stable which prevents excess snacking or cravings later on. I mix and match depending on my mood, and always hack the menu to make restaurant options healthier. This is how despite dining in restaurants every meal for over 3 weeks, I managed to maintain my weight. PEAR, DATE, GINGER & WALNUT SLICES (recipe below 👇) Sweet, fruity and bursting with ginger nuttiness. Baked chopped pears, dates & walnuts give these slices the ultimate moist chunkage. Baking is my escape & therapy & tasting is just a bonus 💚 •2 cups spelt flour •1 cup dates •1 tsp baking powder •1 tsp baking soda •1 tsp ginger •pinch of salt •1/4 cup coconut oil, melted •1/4 cup walnuts •200ml soya milk •1 tsp vanilla extract •2 cups Pear Preheat oven to 180° Line line a tin. In a bowl add all dry ingredients. Mix well. Next Add wet ingredients, it should be a batter that's not to firm nor sticky. Pour the batter into prepared baking pan. Bake for about 40 min or until center is firm (duration depends on the oven) Leave to cool before removing from the baking pan. Divide up, Serve & enjoy! It's my brother's partners baby shower today! How excited am I, oh yeah throwing in a huge amount of anxiety as well. Keeping in mind "memories over madness" today will be a mega uplifting achievement!!! The best vegan mac and cheese I've ever had 👌 thanks @theglasveganfastfood it actually tastes like Kraft's red box cheesy pasta which was one of my favourite snacks/ foods before going vegan 😋 but it had tomato, herbs and vegan bacon crispy bite things and tasted even cheesier 😀

Sunday pancake stack! With my fave combo choc and banana 🍌🍫 I added organic cocoa powder to the mixture and it turned out so yummy! 316 cals for the whole thing! Aaaaaaa-maze! Recipe: ✨55g flour (half normal, half wholemeal) ✨100ml dairy free milk of your choice ✨dash of golden syrup ✨baking powder 1tsp ✨ organic cocoa powder 1tsp When you’ve blended it all together (I use a nutribullet to whizz it up!) cook on a low/medium heat in the pan! It takes about 30 secs per side! I cook two at the same time!
