Day 6. Clean raw foods. Today was actually a bit of an unexpected detox. After two days of juicing I could taste the #chemo drugs in my mouth and became quite fatigued. 😓 . These drugs are said to clear out of body in 2-3 days. But the residue is still there, today I could taste and feel it. 💦 I am planning on a supervised water fast later in the year to really shift it. The photo on the left was taken in March of 2011, one year before I got "sick". Little did I know that I was heading down a slippery slope of eating unhealthy and creating dis-ease in my body. But who would have known? I was doing everything everyone else was doing? Going to the gym, eating meat, dairy and eggs, rice, curry, you name it and I would eat it, except for shrimp and certain seafood. I was allergic to that. Why wasn't I told that eating animal products was causing me to be sick and unhealthy? I didn't realise what it was like to have good digestion because thats all I knew. No one talked about toilet issues so going to the bathroom every now and then was normal. Constipation was normal. It was normal for me to get headaches, normal for me to feel tired, I wasn't a massive coffee drinker so I never got those 'pick me ups' from food. I was sick because it felt normal to be sick? - 1 year later my life changed as I was diagnosed with mild Ulcerative Colitis in the year 2012 and eventually being diagnosed with severe Ulcerative Colitis 2 months later. - What happened in the years following my diagnosis was a blessing in disguise. I found out that animal products create dis-ease, I found out that animal products are carcinogens (cancer-causing), I found out that cows milk is for baby cows not humans, I found out what happens in the egg industry, I found out why people get heart disease, diabetes, stroke, alzheimers, I found out that the reason I got sick was due to unhealthy eating habits and an unhealthy lifestyle. I found out what it was like to have a great bowel movement after I overcame this horrible digestive disease. I found out the reason for climate change was not cars, trucks, and planes, it was the animals we produced. I became Vegan. - What you eat plays a vital role in how you digest , absorb, and assimilate food. I wouldn't be standing here today if I didn't find out the power of the self healing body and whole plant foods. The picture on the right is me at a medical conference in January 2019 talking about my journey and how we help people reverse dis-ease. Everyone has a second chance to be healthy and I made sure of that!

Oxidative stress is responsible for many ailments today. Oxidative stress is when the body has too many free radicals and can’t keep up with neutralizing them (with antioxidants). This is more of a problem now than in the past because our environment is so much more toxic than it once was. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ A 2010 study shows that CBD oil acts as an antioxidant and another study found CBD has neuroprotective qualities. So CBD can reduce neurological damage caused by free radicals.

Oatmeal tip of the day: SOAKED OATS for the creamiest oatmeal everrrr 🤤 Believe me, your life is about to change! . Serves 2: • 2/3 cup oats • 2 cups of water to soak + 1 1/2 cup to cook • 1/3 cup oat milk - I used @valiosverige oddlygood oat milk • pinch of salt • sweetener of choice (optional) • toppings of choice . The night before, soak oats in 2 cups of water. In the morning, drain the water and pour oats on a pan, adding the rest of the water (which should be enough to cover the oats in the pan). Add sweetener and salt and cook in medium heat until thickened and add oat milk. Cook for 2 more minutes, pour on a bowl and top with desired fruits, seeds, nut butter, etc. . —- . Dica de mingau de aveia do dia: AVEIA DEIXADA DE MOLHO pra ter o mingau mais cremoso da vida 🤤 Acredite, sua vida está prestes a mudar! . Serve 2: • 2/3 copo aveia • 2 copos de água pra deixar de molho + 1 1/2 para cozinhar • pitada de sal • 1/3 copo leite vegetal (usei de aveia) • adoçante que preferir • toppings que preferir . Na noite anterior, deixe a aveia de molho com dois copos de água. Na manhã seguinte, escorra a água e coloque a aveia na panela com o resto da água (que deve ser o suficiente pra cobrir a aveia). Acrescente sal e adoçante e cozinhe até engrossar. Adicione o leite e cozinhe por mais 2 min. I'm not eating sweet food all the time as it may seem. Sometimes I even have... pizza! 🍕 . For the base- it's ready made wrap from cauliflower/marrow/pumpkin with flexseeds, kale, psyillium, tapioca and activated charcoal this time. . Home-made sauce: avocado, lemon juice, tahini, cayenne pepper, water. Before I added chickpeas or soaked cashews/pinenuts to the mixture, but now they are too heavy for me. . . Filling: rocket and lettuce/baby spinach leaves, mini cucumbers, fresh dill and red onion. . Sometimes I add ready made nut "parmesan" on the top or put coconut cheddar on the base under the sauce. . . Eggplants filled with quinoa, zucchini, red bell pepper, corn, and other yummy veggies. 🍆🌽🥕🥗🤩 OG recipe: @avantgardevegan 《《《《《《《》》》》》》 Töltött padlizsán volt a hétvége sztárja.🤩 📌A padlizsánt félbevágtam, sóztam, kókuszolajjjal pocit megkentem a vágott részét, és sütőbe tettem körülbelül fél órára 180-200 fokra (amíg meg nem puhult a belseje). 📌Addig is hagymát pároltam serpenyőben, majd mindenféle apróra vágott zöldséget adtam hozzá (cukkini, újhagyma, póréhagyma, kaliforniai paprika, zellerszár) fokhagymát nyomtam rá, sóztam borsoztam, és curry fűszerkeveréket dobtam rá. 📌Közben quinoát főztem sós vízben. 📌Mikor már nagyjából kész volt a quinoa és a zöldségek is, akkor összekevertem őket, egy konzerv apróra vágott paradicsomot adtam még hozzá, és hagytam hogy „összeérjenek” az ízek. 📌A padlizsánokat kivettem a sütőből, kikapartam a belsejét, összekevertem a quinoás, zöldséges keverékkel, szükség szerint sóztam, fűszereztem még, sörélesztőt kevertem hozzá, és visszatöltöttem a padlizsán héjába. Увидела такой вкусный и простой рецепт рулета у @vegan.mychoice Ну, а я люблю когда быстро, а еще, если и просто ☺️ то через час у меня было уже всё съедено) ⠀⠀ Делюсь рецептом, который немного изменила под себя) 150 г овсяные хлопья 100 г растительного молока или воды 20 г любой ореховой пасты ( у меня была арахисовая) 5 г псиллиум (шелуха подорожника, продаётся в фито аптеках часто) 2 ст.л. мёда ⠀⠀ Начинка: 90 г фиников 90 г размороженной вишни без косточек и жидкости Горсточку измельченных орехов по желанию ⠀⠀ Готовим: Перемолоть овсяные хлопья в муку, соединить с остальными ингредиентами для теста и замесить. Дать постоять 5 мин. Взять два листа пергамента и между ними раскатать тесто в большой прямоугольник до 5мм. ⠀⠀ Далее измельчить финики. Равномерно размазать эту финиковую массу по нашему тесту, сверху разложить вишенку, можно добавить орешков. Потом аккуратно скручиваем в рулет. Запекаем 30 мин при 180* И через 5 мин, его будто и не было 🤣

Roast veges, quinoa and macadamia sauce kind of day 😋🙌 . Progress check in on my gut healing journey 💁‍♀️ As you may know I have many many gut health issues (intolerance induced) which have really impacted my life, increasingly over the past few years. . I have tried absolutely everything under the sun: doctors, nutritionists, naturopaths and gastroenterologists to try and find a solution. I have had to cut out soo many different types of food from my diet, that do sometimes improve symptoms for a while but they usually come back (sometimes even worse than before). . This has left me feeling defeated, deflated and still in incredible pain from my guthealth problems which can really impact overall mental as well as physical health . I have now started the low fodmap diet and I can safely say that nothing has so rapidly and drastically improved my symptoms! Only a couple weeks in and I feel like a completely different person 😆 . I was on the verge of completely giving up and just accepting the reality of living in pain everyday and I’m so so happy I decided to try the low fodmap diet! . That’s not to say it’s for everyone (everyone’s different) but after years of trying alternatives I’m just so relieved to have found something that works for me! Has anyone else had a successful or unsuccessful experience with this?? . If you are considering the low fodmap diet make sure you go to the doctors first and a low fodmap dietician specialist 💁‍♀️

We're not big on meal-prepping here (and by "we" I mean "me"), but on Sundays I try to get an extra meal or two made to start the week off on the right foot. . . I had to stay home from church today because there were too many sick cowboys (and baby cowgirl), so I was able to get a little more done than usual. . . A soup that will last for random meals throughout the week, roasted veggies, baked breaded cauliflower wings (buffalo and seasoned varieties), and stuff for sushi bowls. Ashton made a batch of cookie dough hummus, and Rider made a fruit salad big enough for today and tomorrow 😁 . . Feeling ready for the week! My meal prep got a little out of hand today and took a little longer than usual, but now I’m set for two meals and a snack a day for five days. This weeks lunches include roasted sweet potatoes, kale, zucchini, brown and wild rice, baked tofu and sautéed mushrooms in BBQ sauce, and pesto. I also made some smoothie packs with mangos, kiwis, mandarin oranges, and blueberries (I’ll add kale, banana, and water to complete the smoothies). A little late, but here’s my #veganstpatricksday I made a corned tempeh and cabbage. Modified recipes from @meatfreeketo for the corned tempeh and Irish soda bread. Turned out well, except my tempeh fell apart because I didn’t plan quite right. I added some beets to the tempeh for color and then just left them in because they are yummy. I also needed to cook the bread longer than the hour suggested, but it tasted good. I always find time to batch prep my salads because it’s important to me. Here is my batch cooking from the weekend. We didn’t need a lot of stuff. We still have a lot to choose from in the freezer for grains, soups and chili. Saturday I made Beefless Stew adapted to the Instant Pot and I added Balsamic vinegar before serving it. It’s one of those recipes that’s better the second day. Recipe from the #straightupfood blog and @straightupfood cookbook. It’s a family favorite. I add more potatoes - we like it thick. This morning we baked Yukon Gold Potatoes, Japanese Sweet Potatoes, Hannah Yams and Garnet Sweet Potatoes. Oven roasted a small Kabocha squash. Made a butternut Curry Soup in the Instant Pot - just winged it and it turned out pretty darn good! Love it when that happens but then it’s difficult to replicate unless you take notes. Of course I also batch prepped salads which to me is the most important part of batch prep. Break it down into small goals to work on as you adopt new daily and weekly healthy habits. It’s a journey not a race. Be kind to yourself as you learn a new healthier way to eat. So I had a late breakfast because I had eaten a lot yesterday. So I made homemade baked beans inspired by my recent outing. But instead of beans I used chickpeas as I had them open and leftover pizza sauce ( tinned tomato’s, tomato paste, garlic and herbs reduced down until it was thick) some onion and spices and it was delicious! I threw some kale and sweet corn on as I had them in the fridge and some whole meal toast. Another completely not fancy but simple , super quick , super filling nutritious meal - just some ready made edamame from @traderjoes with 2 scallions, tomatoes and rice wine vinegar and black pepper . Food doesn’t need to be complicated and you don’t need to be a seasoned chef to prepare something nutrient dense yet flavorful. I’m a real person with a real food budget with a busy schedule so my thing is simplicity - food doesn’t need to be expensive or complicated to prepare. Just serenading them with my kitchen view... letting them chill out before adding the kombucha 'mother'. . These will become pure tea kombucha having the characteristics of the original tea flavours. And they will be potent! 💊 . Jasmine green is flowery and a crowd pleaser. White tea is bright, delicate and floral too. Tie Guan Yin reminds me of a humid grassy meadow and ferments bright and light. 🌾🍃🌾 . Then the heavy weight is the 6 year old Pu-erh. Almost jet black, it has a earthy and autumn scent and hints of the sea breeze. 🍂🍁🍂🌊🌊🌊 Combined with tangy overtones... It has a full range of flavour. - my personal fav!☕ . Which reminds me. That was my class room today, I'm so blessed. I've walked on the edge of the sea and count my blessings. I'm truly fortune for having such a supportive friends and family, for living few minutes walk distance from the beach, for being healthy and so conscious about my lifestyle.
