Smoothies have become one of my most favorite snacks in the afternoons these days. Weird right?! It’s 37 degrees out and I’m craving smoothies!?!?! I lightened the liquid added to make it super thick, then topped it with @livepurecubes yummiest vanilla coconut granola! Clean Thanksgiving Stuffing and Gravy Recipe! First things first, y’all have me rollin’ with the Thanksgiving 25 lb turkey microwave prank (if you don’t know what I’m talking about go to the meme in my story. Colorado mornings: I love you. This morning Lynds had to wake up super early to take her family to the airport, and I couldn’t fall back asleep, so I decided to start my day! I went for a drive to grab a matcha while the sun was barely starting to rise while listening to Christmas music and getting excited for my day ahead. I think deep down I was excited to wake up early anyways, because I love mornings and want to start getting to bed earlier! Now that we’re in CO for a little, one of my intentions is to get back into a routine of getting into bed earlier and waking up earlier! Choosing to eat a whole foods plant based diet doesn't mean you have an eating disorder... An eating disorder is when you have an unhealthy mindset attached to the actions you are doing, and your mind pressures you into following certain actions that do not serve you appropriately. An eating disorder is when you have a negative mindset towards food(s), that forces you to eat (or not to eat) certain food(s) only because you deem it to be "right" or "correct". If you choose to follow a certain diet, is it because it serves you optimally? And ask yourself, are you fully satisfied in all ways possible? Is it forced, or does it come naturally? Are you happy & content? If not, it may be time to adjust what you're doing to make that happen! 🙏✨ I couldn't be more satisfied & happy following a HCLF whole foods vegan diet 😍

Power Muffins to help you power thru your Friday and onto the weekend 💕 These are energy and nutrient dense. I recently saw a better way of posting nutrition information and thought yes! that is more appropriate. The term calories tends to have a negative connotation associated with it, like the less the better, but calories are just a measure of fuel that our bodies require, so changing that association into a more positive one I think helps better appreciate what food is providing. This recipe yields 12 muffins and the energy provided with each muffin (without any add-ins) is: 160, 10 gm fat, 3.5 gm protein, 2.5 gm fiber. These have a slight coconut, nutty flavor. The hemp seeds and chia seeds provide essential omega 3 fats that can be harder to incorporate into our diet bc there aren’t as many food sources. Here you go! Recipe: Dry ingredients: 1 cup oat flour 3/4 cup almond flour 1 tsp baking soda 1 tsp baking powder 1/4 tsp cinnamon 1 Tb chia seeds 2 Tb hemp seeds Wet ingredients: 4 Tb coconut oil 5 Tb applesauce 1/4 cup + 3 Tb maple syrup or honey 2 flaxseed eggs (2tb ground flaxseed + 4 TB water mixed) or 2 eggs 1 tsp vanilla Directions: mix dry ingredients together in a larger bowl. In a separate bowl mix the wet. Add the wet ingredients to the dry mixture and mix well. With oat flour, the extra folding and mixing helps promote rise since the oats lack gluten. WHAT in the world is better than a bowl of soup on a snowy evening? ~ This one came to fruition fairly quickly thanks to a few pantry staples and some prepped chopped kale. Here’s the recipe : ~ 1️⃣ 1 large onion, medium diced 2️⃣ 2 stalks celery (dice it same size as onion) 3️⃣ 2 medium carrots (also same size dice) 👉🏻 instead of using fresh carrots, I had some leftover roasted smaller ones that no one was eating and I was not about to throw them out (no waste in my kitchen), so I added them to the pot later on and they just gave the soup another level of flavor. If using fresh, add all 3 ingredients at the same time, salt and sweat them out. ~ 4️⃣ I thinly sliced 6-7 cloves of garlic and added them in when the other veggies cooked down a bit (no browning. You don’t want them to brown, just sweat). 5️⃣ once the garlic became fragrant, I added in 14 oz of Italian peeled tomatoes, breaking them down in the pot with a fork. First add the tomatoes, break them down and then add the liquid from the can. Add in salt, dried oregano, basil and a pinch of chili flakes. 6️⃣ add in 4-6 cups boiling water or warmed broth and bring to a simmer.
