Went to @the_greengrocers to refill my jars of happy things and got some red lentils, buckwheat, pumpkin seeds, shredded coconut and an omega seed mix. Getting some things in jars is such an easy way to save some plastic and also reuse the jars you would otherwise throw away. I usually take whatever empty jars I have and fill them with whatever looks good to me. If you have a store where you can fill your own containers, give it a try! We start the accountability piece April 30th, but you can start learning and get in the group now. While I have been plant based/vegan for a little over 2 years now, I still like to use this as an opportunity to keep myself accountable and clean up my diet and life as well because I’m not perfect. 🥕Carrot pulp Onion bread (raw vegan) 🍞 . ✳MAIN Ingredients: 4 cups carrot juice pulp (had some celery, kale and apple in my juice too 🙄, but! Still about 80% is carrot pulp) 2 medium yellow onions 1/2 cup freshly ground flax seed meal 1 tbsp coconut nectar 2 tbsp coconut aminos 1/4 cup olive oil 1/4 cup water ✳ Seasoning: 2 tbsp garlic powder 1 tsp fennel seeds Some cayanne pepper Pink cristal salt to taste if you like 😉 ✳Directions: ✅Peel,chop and blend onions until smooth ✅Place pulp, flax seed meal, onion puree, olive oil and water into a food processor. Pulse for a few mins scraping down the sides if necessary ✅Add coconut nectar, aminos and seasoning of choice. The struggle of making your #vegancurry photogenic 🌿 oh well! Here goes! I made 8 portions so I have food for uni the upcoming week 💚🌱 How to: 1. Put your choice of rice on (I use a rice cooker. It’s so easy and they’re rather inexpensive) 2. Chop 2 yellow onions & 4 garlic cloves to fine pieces and fry in some water for 8 mins so they get some colour 3. Put in one 400 g can of cherry tomatoes and let simmer (until the tomatoes “explode”) 4. Put in 2 tbs green curry paste of your choice, 2 tbs tamari sauce (or soy), 1 red chili fresh or dried to your liking (I like it spicy but remember the curry paste is kinda spicy too 🌶) & 2 tbs maple syrup. Let combine for some mins 5. Pour in a 400 g can of chickpeas (rinse them before hand in water to avoid bad digestion) when all of this has combined add in 2 x 400 g coconut milk cans (I use full fat 😍) and then let simmer for about 30 mins for all the flavours to combine. I had some more greens on the side for this meal 🙏🏻💚🌱
