As we finish up our quarterly detox this time we decided to take it a step further with an elimination diet. Creatures of habit. Every Sunday night we have my homemade pumpkin Shepards Pie. Made on the weekend to make it a quick, easy but healthy dinner.⠀ ⠀ RECIPE:⠀ 450g of mince⠀ 1 carrot⠀ 1 capsicum⠀ 1 red onion⠀ 3 cloves of garlic⠀ 1 beef stock cube + 1/4 cup water⠀ 1/3 cup of tomato paste⠀ 1/2tsp - chili powder⠀ 1tbsp rosmary⠀ ⠀ Let mince cook through - then add vegetables and spices. Once carrots are soft add tomato paste and stock. Mix.⠀ ⠀ Topping⠀ Roast 600grams-ish of pumpkin or sweet potato⠀ Mash⠀ Add to top of the pie. ⠀ ⠀ Top with cheese or nutritional yeast for the best dinner!⠀ ⠀

mhmm !! late breakfast but honestly I’d probably eat this anytime of the day 😋. Raspberry oatmeal layered with frozen strawberries , cacao nibs , flax seed , coconut flakes and chia seeds. “How do they taste? They taste like more.” -H.L. Mencken . . And that’s exactly how I feel whenever I am served real good Thai food. I like everything about Thai cuisine; the ingredients used, its flavour, the way it’s cooked, the fresh herbs and aromatic spices and above all, the way it tastes. And another reason for my love affair with Thai food is the use of coconut in most of the recipes. A typical #mangalorean girl that I am, who has more than average percentage of coconut milk flowing in her blood stream, my heart skips a beat and makes me do cartwheels in air whenever I find this favourite ingredient of mine in any recipe. . . Since the day we have come back from our vacation in India, I haven’t been cooking anything elaborate. Although we would like to blame our mothers for spoiling us by not letting us cook in their kitchen, it was plain laziness that has kept us away from bubbling pots and sizzling pans. All these days we have been satisfying ourselves with soups and simple dal/rasam and rice. But it didn’t take much longer for stomachs to start grumbling for something exotic and our taste buds to crave for something packed with flavours. . . Thai curries are as dear to me as any Rasam and Sambar. Who wouldn’t fall for a subtle blend of hot, salty, sweet and sour flavours of Thai curry which makes the taste buds tingling? When cooked with home-made curry paste it’s a cherry on icing. Made a big stash of Banting/Keto Granola Mixed nuts & seeds sauteed in ginger, cinnamon, nutmeg & cardamom powder then roasted in coconut oil until golden. I tossed in some shelled hemp seeds & cocoa solids when it was cool. This shit is DELICOUS.
