Wow wow wow! This super rare, heavily allocated, Champagne @champagne_bollinger is insane. It’s rare because the vines are on their own roots and planted ‘en foule’ which produces a wine grown in the pre-phylloxera methods, this is then barrel fermented in old oak. This has produced a rich, intense #champagne unlike any I’ve ever tasted. A real treasure.
After a day of #champagne it’s time for a soothing glass of Henriques Colheita #boal 2000. Fark this is damn good stuff, right @janeskiltonmw? Such an underrated and unknown, historically significant, wine. The American colonies were major customers and Christopher Columbus visited regularly. Taste some history people! But make it at least 10 years old to ensure you’re getting the best quality 👊 Merry Christmas 🎄

This Albariño is fantastic. It brings all I can ask for together in one package. Citrus? ✅ Stone fruit? ✅ Minerality? ✅ Medium body? ✅ Good Acid? ✅ Looooong finish? ✅ ✅ It was the perfect wine with Thai food. I was surprised how well it worked with medium spice. It was also fantastic just sipping while I watched a movie. And sip it I did. Just a small sip, enjoy it, sip again. It never got boring and my palate never tired of it. If you gotta study sherry you might as well go new school old school. The Palma series from González-Byass is a selection from the finest barrels out of their 21000 barrels in Solera. This is a relatively new programme but is selected from some of their oldest stock. Fino requires it’s covering of flor to continue to develop. It takes a special environment to keep this going for longer than 6 years. Each Solera this is drawn from is selected as the best of those special casks. Bottled unfined and unfiltered this is as close as you’ll get to being with the Capataz as they selected the blend. Teaming up some @tiopepewine Fino En Rama with patatas bravas. En Rama sherry is very lightly filtered so it retains more character from the Solera than standard finos. This is similar to unfined/unfiltered in regular wine. It’s definitely more complex than the average one with more breadiness, more pear and green apple flavour and more prominent aroma characteristics. On the food front, patatas bravas were one of my favorite things from Spain. I lived there when I was 20 and on a visit this year my 17 year old fell in love with them too. I decided to try and make them at home and I have to say I patted myself on the back for these. They came out great!
