Day5 ๐ŸŒบ OPOS Beetroot Aloo Rasedar with Rotis and Dosa Day6 ๐ŸŒบ OPOS Sourashtrian Kulith paige (Horsegram Millet Kanji) This Kanji is a nutrient powerhouse and so soothing when you have cold/cough or phlegm. This is a popular meal served in Sourashtrian homes. It can be served along with Gojju or any spicy chutney/thokkku or some pappad will do. ๐ŸŒบ Dosa with Peanut Chutney. This is a easy peasy county and needs 1/2c roasted peanuts, 1/4tsp tamarind, 1/2tsp salt, 4 round red chili. Blend with water. Add 1/2tsp oil to emulsify. Add tadka and serve. You may also add some coconut. Day 7 ๐ŸŒบ Sweet Aval / poha for little oneโ€™s breakfast, Lunch at @a2busa and dinner at Panera bread Day 8 (Husband back home) ๐ŸŒบ OPOS Samba Godumai Veg Upma, OPOS Pasta, Pressure baked red pepper and tomato blended into sauce. Mixed both to make a creamy vegan pasta, Guacamole and Chips, Birthday celebration dinner at @seasons52

#a_wholesome_mess #satvik #interimrefrigeratorfreelife Day4 ๐ŸŒบ OPOS No cook Peanut Banana porridge with crackers (Isha recipe) ๐ŸŒบ OPOS Millet Kanji ( added couple beans that were left out and it gave that green hue) with murukku This is a very simple kanji and has become a His and Hers favorite. I can see it being made often in the future. Plus it is very comforting while recovering from fever and cough. ๐ŸŒบ OPOS thali - OPOS Udupi tomato rasam, Carrot Palya, Vazhakkai podi kari made in one shot. For carrot Palya used some saru podi salt and jaggery. For Vazhakkai podi curry used Puliyodhari podi, rice flour, red chili powder, turmeric and salt. But we donโ€™t have a refrigerator here and it will take another week or so before we get it. It is truly a blessing in disguise. I had always wanted to have a home without refrigerator so here my dream comes true atleast for few days! With this comes the challenge of storing everyday perishables. I just took a moment to rewind my childhood days! We never had refrigerator back home especially at grandmothers place for many years. Still we got to eat fresh, delicious, wholesome and balanced meals! I hope I can relive those days! I bought few veggies at a time that will last longer like Tomatoes ( slightly raw) , potatoes, raw plantain + carrots, beans, beetroot that are needed for just one or two meal! I have a can of coconut milk next time will get those small cans. Also got freshly made rotis which will last for a day or two. So our first meal in our new home was Day 1: ๐ŸŒบ OPOS Sabudhana khichdi (not in pic) ๐ŸŒบ Roti with OPOS Beetroot subzi (not in pic) Day 2: ๐ŸŒบ OPOS Veg Biriyani, ๐ŸŒบOPOS Kerala style Black eyed pea curry ( both has coconut milk had to use up the can) and Roti Day 3: ๐ŸŒบ OPOS Sweet Potato Kara kari ( used homemade puliyodhari powder from 5mins OPOS book Lemon rice ( not really OPOS as I had to make Chana/urad tadka) ๐ŸŒบ OPOS Sukku kaapi ๐ŸŒบ OPOS Green Mung curry and fresh Rotis picked from the store today. (Added leftover coconut milk from yesterday) I realize how naive I am. Stashing all the veggies in the refrigerator as soon as I pick from the store and let it sit there for days or sometimes rot! I never tried to keep them out and really see they stay fresh atleast for few days in the room temperature other than tomatoes, potatoes and uncut squash! Fortunately or unfortunately this is the norm for many! When I peeled the carrots it felt lot more juicier and fresh than picking from the refrigerator. And ofcourse OPOS helps to bring out their best in the dishes! Btw, I figured out that I can keep perishables like coconut milk in garage for a day and it will still be fresh! Thanks to the chilly weather here.

In Indian tradition sweets are offered to near and dear ones when there is a happy occasion in the family or among friends. If not something exotic sugar is given when we go for exams or start a new job or go on a trip etc. Sweets play a vital role in Indian cuisine. This OPOS Vegan Butternut squash soup is my new found love ๐Ÿ’›๐Ÿ’›๐Ÿ’› It is adapted from a soup recipe from my upcoming book. This is one of the best soup I have ever had and tasted a lot like the Panera #autumn squash soup. Pootharekulu meaning costed sheet, a Popular Indian dessert from Atreyapuram, East Godavari district. This is a labor intensive process and it is exclusively made by the people living in this village. They first soak a special rice called Jaya and grind it to a smooth batter. An inverted mud pot is kept under the flame ๐Ÿ”ฅ and heated. A fine cloth is dipped in the batter and immediately spread on the pot surface and removed. This process forms a thin layer of starch. The result is a transparent paper like layer which is then used to stuff sugar/jaggery, Ghee, nuts etc and rolled or folded into small pouches. These sheets are available for sale in the local shops in Andhra Pradesh/Telengana. This is an extremely popular sweet which I was totally unaware of until last week when a friend @meherdeepu shared a big box with us. I was stunned at her attention to detail and see how she put together 12 course feast in minutes inspite of her ill health and age. Since it was just two of us I tried to tone it down and use whatever veggies I had at home. Since I ran out of dates and I so wanted to make that rasam I made Fig rasam instead. ๐ŸŒฟ OPOS Capsicum and Carrot Sambar ๐ŸŒฟ OPOS Fig and Mint Rasam ๐ŸŒฟ OPOS Chow Chow Beets kootu (using CCP paste) ๐ŸŒฟ OPOS Cabbage poriyal (DDโ€™s favorite) ๐ŸŒฟ OPOS Potato Podimas (DDโ€™s favorite) ๐ŸŒฟ OPOS Nei paruppu (non vegan) ๐ŸŒฟ Non OPOS Rice ๐ŸŒฟ Banana Chips ๐ŸŒฟ Cucumber and Cantaloupe As you can swipe and see I made the 5 course in one shot. Made Sambar, rasam, podimas, kootu and poriyal. I first prepared dal and split it in 3 parts. Mixed the first one with Sambar podi, curry Leaves, tamarind paste, salt for Sambar , next one with dal, Coconut cumin pepper paste, salt for kootu and third one with salt and tadka for nei paruppu. This was perfect for me and my daughter and I had little bit of Sambar, rasam and kootu left. This would have been perfect for two adults.
