Ingredients 2 mixed peppers, chopped 2 courgettes, chopped 4 cloves garlic, diced 2 onions, diced 200g black beans 200g kidney beans Handful of jalapeños Passata 2 tbsp tomato purée Olives, to garnish (optional) 1 large tomato, chopped (optional) 2 cups rice 1 tbsp mild chilli powder Method Cook the rice according to the packet instructions. Add the peppers, courgettes, garlic and onions to a pan and cook for 15mins. Then add the black beans, kidney beans, passata, tomato purée, jalapeños and chilli powder and cook for a further 10mins. Garnish with olives and tomatoes or salad of your choice.
