I was in the mood to get my hands on some kale and I mean literally. Massaging kale helps breakdown some of those chewy fibers and make it’s a lovely green color. It’s tomato season! These juicy little berries are a great source of vitamin C, potassium, folate, and vitamin K. One of my favorite way to eat the cherry size ones is roasting them with a little salt, pepper, and olive oil. I absolutely love fruits and one of the best ways to incorporate them into your every day is to shop for them seasonally. 1. They are cheaper for one thing because the farmers usually have an abundance of the product which lowers the price. 2. They are also more fresh and more flavorful based on the time they are harvested. Because they are in season they don’t have to spend time in a hot house to artificially ripen. 3. And my favorite reason is that they are more environmentally friendly. They encourage more purchases from local farms which reduces transportation waste, less refrigeration, less hot house gases and less use of pesticides. Let’s talk about moderation. I strongly feel this is essential part of a healthy diet. You can eat salads, fruits, quinoa, low fat yogurt with granola, and every other textbook health food item till the cows come home. But sometimes you just need listen to that occasionally indulgence. Those who put themselves on the strict path of “I must only eat clean foods” or I’ll ruin everything are not doing themselves any favors. Because eventually that ice cream or little piece a cake that they won’t allow lingering in the back of their minds begins to be this unrelenting monster barraging around. Eventually that monster wins. The person is like forget it and instead eating just a piece of cake they eat an entire cake. By allowing yourself in a mindful manner to enjoy the occasional off the beaten health food track it can help create a healthier outlook on food as well as making it easier to stay with a general healthy lifestyle. . I’ve been thinking about these pancakes since I knew I was heading down to ocean city Maryland. Are happy jacks cinnamon bun pancakes the healthiest thing on the planet? No but I ate them knowing I would enjoy them and that my usual healthy lifestyle was not destroyed. I guess some people would find it weird that I enjoy soup all year around. But what’s not to love you can get multiple servings of veggies, a carbohydrate, and a protein all in the convenience of one bowl. This particular bowl full of goodness is a white bean, spinach, artichoke soup. A trick I like to use to thicken up the broth is by throwing one of the cans of beans in a blender until smooth and mixing them in. ~I have to say I’m feeling pretty festive for a Friday. I got through all my patients pretty quickly with the help of a few discharges. And although I’ll be back at the hospital tomorrow I’m home and feeling hungry. So what says festive food to me. . .
