Life happens. Sometimes you can have everything in your life planned out and scheduled but then the universe likes to throw in something just to shake it up. This week was one of those weeks for me. My dog was diagnosed with pulmonary hypertension so of course I want to do best by my favorite thing on this entire planet. But that also means that sometimes you got to put stuff you used to prioritize to the side, including your healthy eating, and getting through whatever it is that’s been thrown into your path. But the best part about it is that you can always go back and pick up where you left off. Luckily my little doggy soulmates took well to the meds. This was my let’s wing it version of shakshuka. I definitely don’t have all the ingredients for it and I decided to add some zucchini noodles which it not traditionally done. Trying to meal prep more for my work lunches instead of taking the easy way out. Meal prepping helps you provide yourself with a healthy and balanced meal. At the hospital all of the supplements that we provide have whey protein but what happens when we have a vegan that is in need. Well we just make a shake out of tofu and it’s surprisingly good. This one I made up for my self at home using some left over tofu. Well I’ve had this acorn squash for over a week and couldn’t decide how I wanted to stuff it. Should I go savory or should I go sweet?? Well being that it’s Friday I decided to go a little cray cray with my bad self and go with both. My marinated tofu is providing that Unami savory flavor while the apple provides that contrast of sweet. Kind of like eating a chocolate covered pretzel but made with veggies and fruit. . . So nothing like that. Breakdown in my story.

Watching everyone’s post going to state fairs put me in the mood for gyros. I went with a vegetarian version using tofu and not to brag but the random marinade I came up with was definitely on point. It’s sometimes hard to eat healthy when you are extremely busy. And this week I was. Between the hospital and the long term care job I put in close to 55-60hours all while pet/house sitting for a friend. So not only was my plate extremely full but I wasn’t in the comfort of my usual environment. And it’s okay when life makes it so you can’t have your usual green smoothie in the morning and you have to go with quick and convenient. You can still make the quick and convenient a healthy option. What helps making the right choices is keeping it simple. The simple dinner I threw together: pre-done zoodles, all ready made pesto, shrimp, and fresh cherry tomatoes.
