The lovely view from the @crossfitsoutheast floor! I haven't felt like this since I started Crossfit over 3 years ago! Woke up feeling pretty tired after 2 massive training sessions yesterday (Crossfit and karate), so I still went to Crossfit this morning but adjusted the workout to: 5x5 power cleans 40kg 12 min WOD 30 sec on 30nsec off Alternating air assault bike and tower Averaged about 5 calories on the air assault bike every 30 seconds! My go to dish whenever I need to bring something! Delicious, tasty and definitely not healthy! Creamy Potato Salad with Crispy Bacon Ingredients: 2kg red baby potatoes 1 cup mayonnaise 1 1/4 cup sour cream Salt and pepper 1tsp garlic salt 1 cup finely chopped spring onions 1/4 cup finely chopped chives 5 pieces of streaky bacon White vinegar 1/2 bunch Parsley finely chopped Recipe 1. Place the potatoes in a cold pot of water (with some white vinegar to stop the skins from splitting) and boil until a skewer passes through. Drain and let them cool. 2. While the potatoes are cooking, place the mayonnaise, sour cream, red onion, chives, spring onions, parsley and garlic powders in a large bowl and mix thoroughly. Season well with salt and pepper. 3. Once the potatoes have cooled, chop into bite size pieces and mix it into the large bowl containing the mayonnaise mixture. Toss thoroughly so all of the potatoes are coated. 4. Place 5 pieces of streaky bacon in the oven (I use the grill and oven setting) and cook until crispy. Roughly chop the crispy bacon and scatter over the top of the salad.
