Spiced honey and apple tea. A sweet tea with the natural sweetness of green apple and local Georgian honey beautifully merging with a spice mix. A seemingly simple tea with a wonderful blend of flavors. Of all the spices floating in the blend, the flavor of clove stood out. A mini array of spicy kimchi and pickled vegetables made for an unusual and balanced accompaniment.

I was at @chateaublanc.ae the other day for a baby shower celebration which was beautifully organized around afternoon tea. I picked the Jasmine & Lily blooming tea. . After brewing the tea turned a delightful yellow color with a light orange undertone. The flower blooming in the liquor was a really pretty sight. The blend was refreshingly warm with the floral notes lightly lining the liquor. It was smooth and refreshing. I wasn’t given any information about the steep time of the tea. As the tea steeped further in the teapot the color of the liquor darkened and the flavor retained its lovely fresh floral tone but with bitter notes that after the third cup was no longer enjoyable. If the steep time was clarified and the tea leaves and flowers removed in time; it would have been great all the way.
