Whipped up a quick chickpea curry with veggies and potatoes for dinner today. Super quick and really good! Recipe below! 🥕🥕🥕🥕🥕🥕🥕 . . . . . . . . . . . I just sautéed 2 onions, 3 cloves of garlic, 3 sliced carrots, 1 fennel, 3 cubed potatoes in some olive oil for about 5 minutes on medium heat, added a tsp of each freshly grated ginger and turmeric, two jars of chickpeas (drained and rinsed), two cans of chopped tomatoes, 2 cups of veggie broth, seasoned it with coriander, garam marsala, dried mint, salt and pepper, let it simmer until the veggies are tender. Traditionally, we don't consume our kale in smoothies or baked as healthy snack in northern Germany. Instead we cook it for several hours with lots of lard and serve it with meat and sausages. Since that isn't really my style 😜 I made a healthier, vegan version of this dish. I cooked the kale with mustard and onions in some veggie broth and served it with roasted potatoes, smoked tofu and a topping of roasted sunflower seeds and sundried tomatoes. This was such a good combo! One of the best bowls yet! There is raw sauerkraut, lettuce, tomatoes, shredded carrot, sweet potato, spinach, sundried tomatoes, quinoa, roasted chickpeas (ras el hanout, chili and evoo), homegrown sprouts, a sprinkle of roasted seeds (pumpkin, sunflower, sesame) and some tahini dressing (tahini, lemon juice, agave, wster and s&p). In my bowl today: a mix of raw (sauerkraut, lettuce, tomatoes) and steamed (carrot, fennel, spinach) veggies, quinoa, white beans, beets, fake chicken, my first homegrown sprouts and a sprinkle of roasted seeds (pumpkin, sunflower, sesame). I got up extra early today and just made a beautiful bowl of carrot cake oatmeal and, right before I could take a photo (or a spoonful), dropped it on my kitchen floor.
